How to make super quick pickles? EASY! Today you'll learn how to master quick pickles, so get ready to satisfy your cravings for the perfect blend of crispness and tanginess. This pickles are great in sandwiches, next to a refreshing drink, or - try it over our Korean Beef Steak!
👩🏼‍🍳 15-MINUTES PICKLES
1/2 red onion
1 cucumber
1 carrot
1 Serrano/Jalapeño or other hot pepper
1 cup Rice Vinegar
1/2 cup water
3/4 tsp salt
3 Tbsp sugar
🔷 cut all your vegetables into thin strips and place in your jar. We recommend a 16 oz mason jar for this quantity.
🔷 Add all your brine ingredients to a small pot and warm up on medium heat. Stir constantly until all sugar is dissolved and small bubbles appear in the bottom of the pot. Don't let it boil
🔷 Add the hot brine to your vegetables jar, close it, and let sit for 15-20, and it's ready!
🔷 Keep in the fridge, and enjoy it for the following week! (if it lasts that long...)

Can you use artificial sugar like stevia?

For sure. The sugar doesn’t have any purpose as a preservative nor for the consistency, but more to balance the flavor. However you’ll need to adjust the quantities; stevia is much sweeter. So depending on which kind you use (packets or liquid) you’ll need much less Stevia than the 3 Tbsp sugar in the recipe.
