Mortar and pestle is definitely a better way to go on that. Better texture and easier to do. Live and learn.

I would suggest doing a rough chop of the garlic and then smooshing it with salt and the flat of the chefs knife. Works for the anchovies too.

If u want real game changer 12" micro plane all kinds sizes. Lemons, garlic,nutmeg.Reggiano Parmigiano. I only buy multi- task kitchen tools. A garlic press easier to use but it also leaves alot of product. You gotta have tools you like and will use. To be honest I've mashed 1-2 cloves in wood bowl with pinch salt u can get it too paste fairly quick Not 2 bulbs. Thats when u want a press or processor lol

just considering, that a garlic press serves the same purpose, just shows you got no culinary experience. It does make a huge difference in taste, not to use a garlic press. i mean, his execution with the fork was bad, but he got the right idea.

That's the kind of raw cookin' I was lookin' for. 600 y/o house is where I was born into, rich family, not money wise but tradition wise... We always knew how to make it and now, because of the internet I got the chance to see others with that knowledge and first of all, I love you guys and second... damn that salad looks like my great granny used to make stuff... that wooden bowl. Thank you so much :-) the great cuisine lives on, underground of course, we never cared about medals and crownes... we simply cookin' with the heart for a family and friends to feed. This recipe is really close to the one I learned from my Dad. Looks so good! Gonna have to make this again soon. One of the best bits is to sopp up the dressing with an absorbent, neutral yet quality bread. I’ll dream of garlic this evening. Yummo!

And yes, the original Caesar salad was made at "Caesar's" in Tijuana Mexico. They do not use red wine vinegar, and they use lime juice as opposed to lemon. And the whole leaves are tossed in the dressing and served that way instead of being chopped. But I'm all in for this version too -- looks delicious. I'm a Caesar fanatic. 🥰

If you’re going to add whole cloves, the garlic is often parboiled to remove harsh flavors and so it will emulsify with the anchovy. However, the original table side Caesar, you rub raw garlic around a wooden bowl, then fork mash anchovy into lemon juice and Worcester...Jack is spot on using the mixture of olive and vegetable oil.

One of my favorite classics, I used to make Caesar and hot spinach salad with bacon table side when I worked as a waiter at the Cocoa Cabana in Cocoa Beach Florida.

The caeser salad is an Italian style salad invented by an Italian from Baveno, Italy named Cesare Cardini. He immigrated to the USA, through Ellis Island. After some time in North America, he returned to Europe. He later returned to the USA and took up residence in San Diego in southern California where he married an American woman and had a child. He opened a restaurant called Caeser’s across the US/Mexican border in Tijuana, México to avoid prohibition laws of the USA at the time, where he eventually moved. He later left México and moved back to southern California where he started production of his Caeser salad dressing he created for sale in the USA. And it’s because of his return to the USA that the salad and it’s dressing is popular in the USA.

If it doesn't have raw egg yolks and anchovies it isn't a Caesar salad. You can buy pasteurized eggs, I pasteurize them with sous vide. I'm so tired of places throwing croutons on some romaine and glopping on some store bought "caesar" dressing and calling is a Caesar salad.

Use a pastry cutter for the anchovy and garlic/salt and that would work perfectly just don’t damage the wood bowl. Looks fantastic one of my favorite salads.

I get using a fork for the garlic. Its alot of work but you get the natural oil working which will give you more flavor. It's just one step instead of chopping it then mashing it.

I love watching Chef Jack work and I have made Caesar dressing from scratch just the way he is doing, however...I've found it MUCH easier to use a garlic press to make the garlic anchovy paste that you coat the bowl with. I do miss Jack.

The Caesar Salad was invented by an Italian immigrant, Caesar Cardini. Cardini had a restaurant in San Diego. But when prohibition hit, he moved it across the border in 1920 to Tijuana, Mexico.

Love how he just used his finger to get the last of the Dijon out. I laughed when he tasted the dressing with a spoon then just tossed it several feet away into the kitchen sink. Old style, down to earth, no messing around!😄

6:47 - The name of the place where they invented the Caesar’s Salad is super easy to remember - Caesar’s! Ergo the name. By the way, it’s not a Caesar Salad, it’s a Caesar’s Salad. Caesar’s was not just a cantina but a full restaurant and eventually a hotel, all of the same name. American prohibition is what put the place on the map and made the salad famous in the USA. They also have their own beer, also aptly called Caesar’s. The place continues in operation today and it’s a great tourist destination. By the way, the hotel was called “Caesar’s Palace” and predates the one in Las Vegas. It had a competitor too called “Hotel Flamingo.” It is largely thought that Las Vegas was inspired by the heydays of Tijuana where there was drinking and gambling and pleasure seeking. The hotel names seem to give credence to that theory especially since the early mob money that built Las Vegas was by the bootleggers who frequented TJ back in those times.

Not really sure if Caesar salad dressing is supposed to be chunky. Don’t want chunks of raw garlic in mine for sure.

Love this guy and miss him, but yeah I don't think biting into large pieces of raw garlic is ideal. I think garlic paste is probably best for this.

nah... you take 4-5 anchovies, 4 egg yokes, and 2 chopped garlic cloves and add to a blender. briefly blend and then turn off when combined. in a measuring cup combine 1/2 cup extra virgin olive oil and 1/2 cup light olive oil. put the blender on its lowest setting, and pour the olive oil in a steady, slow stream (should take about a minute and a half). this will make a really creamy dressing. then remove the contents from the blender and add to a bowl... add the juice of 1/2 a lemon, 1/2tbsp of red wine vinegar, 1 tsp dijon, and a 1/4 tsp Worcestershire sauce, and a handful grated parmigiano reggiano. whisk together. add a bunch of fresh ground pepper, and (if required) salt to taste. this recipe is based on Tyler Florence's and is the best i've come up with.

I’ve had a cease salad with whole garlic cloves and chunks of sardines. Taste amazing. Especially, with a ton on tin can Olivier oil.
