Today, I'm excited to share with you a special family recipe for Spanakopita
that has been passed down to me by my great-great aunt from a small village called Mesini in Greece.
This traditional Greek dish is made with spinach and feta cheese mixed together and layered in homemade crunchy phyllo pastry.
The best part is that it's so easy to make and requires no pre-cooking of the spinach.
This appetizer is perfect for any occasion, and it's sure to impress your guests.

►INGREDIENTS:
FILLING:
450g (1 large package) BABY SPINACH
250g SLICED LEEKS (2 leeks)
2 CUPS FRESH CHOPPED SCALLIONS (GREEN ONIONS)
1 CUP FRESH CHOPPED DILL
1 CUP FRESH CHOPPED PARSLEY
1 SMALL ONION DICED
4 LARGE EGGS
1 CUP COTTAGE CHEESE
250g CRUMBLED GREEK FETA
1/2 CUP EXTRA VIRGIN OLIVE OIL
SALT AND PEPPER
PHYLLO:
350g ALL PURPOSE FLOUR
1/4 CUP OIL (ANY OIL WILL DO)
SALT
1 CUP OF WARM WATER
