This is the best hummus recipe based on the authentic Lebanese methods. Hummus is a healthy snack that's made with a few ingredients and perfect for parties!

🧄 HUMMUS INGREDIENTS
1 15 ounce can chickpeas
3 tablespoons lemon juice
2 tablespoons tahini
2 garlic cloves
1/2 teaspoon salt
Extra virgin olive oil for serving
Paprika for serving
Fresh parsley for serving
INSTRUCTIONS
1. Place chickpeas in a bowl of water and rub them together to peel the skin (optional step, but helps create a creamy texture).
2. Drain the garbanzo beans and transfer them to a food processor. Blend them alone until they become powder-like, scraping down the sides as needed.
3. While the food processor is running, add the ice cubes, lemon juice, tahini, garlic clove and salt, and blend for about 5 minutes until smooth. Once everything is blended, you can slowly add hot water while the machine is running to get a smoother texture.
4. Taste and adjust as needed by adding more lemon juice or salt.
5. Spoon the hummus onto a plate or bowl, and spread the hummus with the back of a spoon to create swirls.
6. Drizzle with olive oil, sprinkle with sumac and fresh parsley. Serve cold or at room temperature.

Think again :-)… most common mistake : no garlic il the authentic hummus recipe . The trick to make it smoother is not « additional mixing « it’s adding one or two ice cubes in the mixer at the end of the process

watched this to compare to my family’s (syrian) hummus recipe and cheered when you mentioned the ice. makes such a huge difference! we dont add garlic but we do add some cumin to ours :)

You will peel the chickpeas in no time at all if you pile them into a tea-towel or dishcloth, gather up the corners of the cloth so the chickpeas cannot escape (it will look like they are enclosed in a bag) and then rub the towel with the palm of your hand quite vigorously. You will then find the skins have come off quite easily inside the cloth. You might have to do this in two or three batches, but it does work. Look at Dorina Allen Fruit Cake recipe if you have difficulty in understanding what I mean because she does the same sort of thing when she blanches the almonds.

You had me at " removing the skins". Without exception, all the really good hummus I've had it was with peeled chickpeas. It is so worth the time and effort to do. Thanks for the instructional. Stay safe.

This recipe is faaaaantastic! It's just like my cousin-in-law Amine's homemade hummus. I could eat it with a spoon, it's soooo good. I'm immensely thankful I found, and selected your recipe to try as i made it for my niece who is coming to visit. I have to say though, peeling those chickpeas took me much longer than 5 mins. Hahahaa. But I did soak them in boiling water with a sprinkle of baking soda. I bought the store brand of chickpeas but they were quite small. I highly recommend a brand name. Where I live in Canada, we don't have the ones you used, but I will get Unico the next time. Thank you very much for sharing your father's magnificent recipe. All the best to you and yours always.

I wish it takes me 5 min to remove the skin from hummus! I need 15 min per can! But totally worthb the results. I use a little bit of the juice from the can, just adds to the flavor texture profile❤ thank you for your videos!

The reason the ice cubes work is because the machine heats up and starts to cook the legumes which makes it lumpy. The ice cubes keep it cool so that doesn’t happen an it also adds moisture to thin it out.

Tahini is a paste made from sesame seeds, and it is essential in this authentic hummus recipe. Most stores will carry it. If you are having real trouble finding it or have allergies to sesame seeds, you can use olive oil in its place.

I've used almond butter as an alternative (in desperation) but it tastes great, although different. Tahini is basically seasame seed butter, so almond butter adds the same emulsified texture.

No sorry. It's made from grinding sesame seeds but it's quite a process to make it. You can use olive oil instead.
