I don’t use fish sauce for my authentic pho recipe is because Fish sauce gives the pho broth a sour flavor or taste. Also back in the day, We used SALT FOR EVERYTHING BECAUSE FISH SAUCE WAS A SCARCE AND A LUXURY Resource...Im( BAC PEOPLE )WHO ARE FROM THE ORIGINAL NORTH OF VIETNAM BEOFRE THE COMMUNIST NORTH CAME ABOUT, this is the recipe I use for PHO BAC!

my mom was in vietnam during the vietnam war. This is actually how she makes pho. It's so good, but she doesn't use the microwave

@@fun-x7039 that’s so awesome.. yeah I actually prefer roasting the ginger and onions over an open flame or an oven, but like I said in the video, I wanted it use the quickest method!

I try it one day your recipe thanks for sharing.. I try many times to cook pho bo ga noodles soup but it sad that I did not get the taste that I want too.. I like the one that if I buy some pho bo ga soup hopes this is it..

Blanching with boiling water doesn’t remove yucky stuff. You need to start with room temperature water ans bring it to boil. That way, all the yucky stuff will be forced out of the bone/meat.

I can never seem to get my broth right. All the recipes I have found use WAY more onion and WAY less ginger than you and use fish sauce instead of salt - I saw your comment below. I will give your recipe a shot tonight (doing an overnight bone simmer with knuckle and marrow bones) for the pho tomorrow. In case Anyone wants to know, the spices in the large bag are STAR ANISE, CINNAMON, FENNEL SEEDS, CLOVES, CORRIANDER SEEDS, and CARDAMON.

Thats the same brands I use for Pho! Glad to know I chose the right ones! :) And if you dont already have mushroom seasoning powder, you are missing out! I add it to everything! Almost lol...

I remember growing up with a Asian family and they would make this occasionally now that’s winter is approaching I am just thinking about some. Although I never watched my friends mother make it because she would prep it early in the morning for afternoons but yeah thank you for showing us how to make the broth. Also I was wondering do you cook the noodle separate or do you out the pho in the bowl and let the broth cook it ?

Not Vietnamese, but my Vietnamese friend chastised me for cooking the noodles in the broth. He said the trick to keeping everything hot is to heat the bowl, cook the noodles separately right before you use them, and make sure the broth is piping hot before ladling into the hot bowl on top of the noodles. That way the broth doesn't cool so quickly. I still can't get my broth right. Giving it another go with an overnight simmer tonight.

- " Pho " is a traditional breakfast dish of Vietnam, which has existed for hundreds of years. There are three main types of Pho: Beef Pho, Chicken Pho, and Horse Meat Pho. But people who eat horse meat are very few, so only beef noodle soup and chicken noodle soup are more popular. In addition, there are 5 Vietnamese medicinal herbs - combined with spices and concoctions to suit your taste, it's perfect. Our way of eating pho and the original recipe has to be powerful. One without the other isn’t flavorful or powerful enough 😂

Do you add the brisket the same time you add the beef bones?

Yes. But the brisket will cook much quicker so it’ll only take about 2-3 hours when the brisket is finished!

I do not use fish sauce at all for my pho, just because it makes the broth sour . 😎. Hope this helps. Good luck 👍

Aren't you supposed to blacken the ginger, shallots and onion before adding it to the pot? All of the videos and recipes that I have watched or researched charred them in Hanoi. Is it not a necessary step?

You can charred all those if you prefer it that way, but I don’t do it because one, it’s hard to charred it if you have an electric stove, second, it takes too much time and the flavor isn’t too much difference than baking it in the oven or microwave it! You just need to slightly cook those ingredients so it can help brings out more flavor

We don’t eat the brisket in the pho any longer because they’re too dry . So we don’t even use it in our pho

Doesn't it get watered down when you fill it up with more water after taking out the bones? I mean, the first time it looked to me it was perfect. And it's inevitable, when you simmer something for so long (I leave it for at least 8 hours), you're bound to lose 1/3 of your water. I don't think it's a good idea just filling it up with more water, you will dilute the meat and vegetable flavor.

Pho should be bright, clear, fragrant and golden brown with just the right amount of fat. The brisket should be tender, moist and beefy, not overcooked, dry and tasteless. Your broth is muddy, too fatty, too salty, has mushrooms which dont belong in pho and you've admitted in another comment here that the brisket is too dry because you overcooked it. Also, NOBODY uses an entire cup of salt for a couple of gallons of pho broth!! Plus, THREE cups of mushroom seasoning that already has salt, MSG, soy protein powder and other chemicals in it?? I dont want to eat processed foods in pho! This is nothing like other pho recipes which are made from fresh, whole ingredients and finished with care.

My intention is to get the recipe out there for those that are interested in learning about my recipes.Matter of fact this was my first video So I am really proud. But if your common is to criticize me on the expertise of the video and has nothing to do with the recipe then you can go somewhere else and do that. That would be greatly appreciate it!

@@chef-trinh3101 I was trying to help you with truthful constructive criicism. I too wanted to know your recipe based on the video title. I've been trying to get good at making pho. Mine has been okay, but not great. I was expecting an understandable recipe I can try myself with footage of you serving and tasting it or at least a photo of the finished dish. What you provided was a poorly thought out, as I said before video that I found too confusing to attempt. Why? For one thing, you "seasoned" the pho 3 times. The third time you stated you were adding 1 cup of salt in addition to the salt you'd already added. Then you said you were adding 3 cups of mushroom seasoning. I would guess based on experience that a dried powder called mushroom seasoning is made mostly of salt. I love my broths and soups on the salty side, but I think that much would be too much. I hope your pho was good, but I was disappointed by the time the video ended and felt I'd wasted my time. Based on everything, I concluded you were more interested in your viewer count than in content. Sincerely hope this helps your next effort.
