Today on Booze On The Rocks, we made the Chi Chi cocktail, created by Donn Beach; it also went by a different name, The Macadamia Nut Chi Chi. The original version contained Macadamia nut liqueur, which became hard to find, and slowly, the cocktail changed. It became a three-ingredient cocktail containing vodka, pineapple juice, and cream of coconut. This created a delightful cocktail that was very sweet, so I modified it with lime juice to balance it out. Try it out, and let me know what you think.

CHI CHI
2 oz/60 ml Vodka
5 oz/150 ml Pineapple Juice
1 oz/30 ml Cream of Coconut
.5 oz/15 ml Lime Juice
Method
1. In a cocktail shaker, Combine all ingredients.
2. Shake with crushed ice for 5-8 seconds.
3. Free pour into a pint glass half filled with crushed ice.
4. Garnish with a dehydrated lime/lemon wheel.
