Honestly as a Jamaican, I am embarrassed to say I am not the best cook is something that I never take a liking to when I was young. But now being an adult, I see the importance of learning how to cook. I followed your video and I made curry chicken for the first time and even though I over seasoning it tasted really good. I like how easy your video is to follow along and the way you explain everything. I appreciate you the way how you set up all the ingredients, you telling us how to seasoning the meat and how long to leave it on the stove to cook/steam very helpful. I used you’re recipe last night. I had boneless chicken thawed and couldn’t wait so I just cut it in chunks. My daughter usually refuses curry when we order out. But she had 3 servings. So you know it was bomb because even the picky children love it. 😂❤️ thank you!!! The only thing I did different was no scallions. Next time I’ll try it to see if there’s a difference but I don’t like to eat it.
Lots of gravy is a must. When the chicken is done and all that's left is the gravy, warm that up with some rice (or roti) and that's a great lunch right there.
I just made your recipe. I added a little soy sauce and Worcester sauce too. I only used one pepper. Mine didn't come out as yellow. I didn't have the brand of curry you suggested. The flavor was still there. Thank you. I haven't tried this in years and last time I was a clueless cook. Thanks again.

Better to add the carrot and potato just after the chicken is sealed and before the water goes on. They take on the seasoning and have more time to soften and thicken the gravy

Hey Jody! Can you spell out the ingredients for me? Basically, are those green onions? What kind of pepper(red one) and what type of curry powder you suggest?
Yes it’s spring onion, the pepper Is scotch bonnets pepper they sells in the Caribbean shops and African shops it’s very hot so only a little bit needed, if you don’t have it you can used whichever one you have ok, betapac curry powder it’s a Jamaican brand it really good. Hope that help.
