Ingredients:
3 leg quarters
1 tsp chicken seasoning
1 tsp all purpose seasoning
2 tsp curry powder (I used 2 different powders for this recipe)
2 stalk scallion
1/4 tsp thyme leaves
pepper (as you like)
2 pegs garlic
1/8 tsp ginger (grated) **optional
6-8 pimento berries
2 tbsp. vegetable oil
water (as needed)

For Everyone's Information, NOTICE THAT BIG ASS SPOON SHE'S USING TO SCOOP THE POWDERED INGREDIANTS IS NOT A TEA SPOON. IT'S AT LEAST 1 TABLE SPOON!!! I USE 1½ TABLE SPOONS! Otherwise, in my opinion it's the best recipe & cooking method for a small batch. This is my go to recipe & every time I made it, I had to come back & watch what she does in order to not be confused. But now I've hand written the recipe & make it often with confidence now! Making it today & realized I needed to come back & say something. YOU'RE WELCOME & ENJOY!

I like that you kept the recipe authentic. You didn't add a bay leaf or tomatoes as suggested by other vloggers. Easy to follow recipe. I can follow your recipe.

My first taste of jamacan style food was a recipe similar to this one and i gotta say it really gives you an appreciation for how simple the recipes can be but how amazing everything can taste. I have a Jamaican family and been to the west indies twice. That's only place I've been to abroad. First when I was 4-5 years old and again when I was 11-12 years old. I've cooked some jamaican recipes in the past and I loved it.
