Ramen eggs or hanjuku eggs (Japanese boiled eggs) are yummy but they can be expensive to buy those ready made ones or from the restaurants. I mean they aren't exorbitant but you can easily make these eggs at home - anytime. Don't take our word for it. Try it for yourself!

3 eggs
1/4 cup light soy sauce
1/4 cup water
1/4 cup mirin
1 tablespoon sugar
1 teaspoon of dark soya sauce

Made 60 eggs for obligatory CNY 2nd Day visit to the in-laws...sort of potluck. Everyone was amazed and loved them. Shared your recipe. Thanks again. ( Saved me a bundle if I were to cook or buy something else for a crowd of 100 pax...children, grandkids and great grand kids. Mother in law is 90 plus.)

Thanks for explaining! I had a recipe which say to boil the water, add in eggs carefully and reduce to a simmer. I prepared 4 eggs for 6 minutes and got kopitiam style soft-boiled egg. Only realised in your video that even when reducing to a simmer, the water should still be boiling. Also made this noob mistake when I was trying out online recipe (no video) for 糖水 once.

To "simmer" means just below boiling point.

Sorry if this seems penny pinching. .can we reuse the marinade mixture for the next batch? It's because I want to try making a few eggs first and if I think I like the taste I'll make more for my friends to share using the same mixture.

Hi Karsei. Absolutely. You can do that. I do that too. Such a waste to throw the marinade away but try to use it only for maximum 5-6 days. Maybe max two or three times. Unless you boil the marinade again before using to prevent contamination.

Anyway , i need tO ask you if i want tO cook more than 3 Eggs, like 12 eggs . Do I need to put 1 litre of water , mirin & soya sauce? Or just enough to cover the eggs will do , pls advice . Hi everyone, this video doesn't say this but i'm going to give a friendly tip! Take a needle and poke the egg at the big bottom part of the egg, make sure not to poke too far into it to pierce the membrane otherwise you will break the egg. This is super vital if you want pretty wellrounded eggs with the yolk in the middle! the eggs in this video have come out ''wonky'' because this method wasn't used. The theory behind this is, the older an egg gets, the bigger the airpockets become. when it cooks the airpocket expands and so does the egg, and it presures against the airpocket making the yolk not be in the center and the eggwhite looks like a square. This step is a vital step to making hanjuku tamago :) And its best to leave overnight for optimal umamii (flavour!) Have fun cooking!

It can also depend on the freshness of the egg. If the egg has been sitting around for a month or more, it dehydrates over time, therefore more air.

What do you use to poke it with? I’m afraid of cracking the shell and everything will come leaking out

@@ronica2623 you can use a needle or a poultry skewer. Its very intimidating at first i get that. You start by poking a hole at the base of the egg, the round part and not the pointy side. why? because at the bottom of an egg theres an airpocket. so its not the egg itself that you're poking. the airpocket is what causes the egg to crack when you boil it because it expands and makes the pressure bigger in the egg. what i do is, i dont really stab it like you do when you check a cake with a toothpick if its done, i start by "drilling" a hole. sort of a side to side drill movement. good luck!

Hi Celyn. That’s mirin. You can get it easily from a Japanese mart. I believe Daiso may have it. It’s SGD3 in Singapore. If let day you can’t get hold of it, you can omit it and just add a little more sugar. It should be fine. Happy cooking!

Good morning! The purpose is to flavour up the eggs and to leave a nice hue on the eggs. . If you just want plain eggs, then you just need to boil the eggs and wait for them to cool before cutting. Happy cooking!

Hi, is there any specific egg brand you recommend? I'm using this seng choon egg, and my yolks always seems to be always near the fatter bottom of the egg which makes them very vulnerable to peeling.

Hi Xiaochuan. The first bottle is light soy sauce. It's a Chinese light soy sauce so you don't really need to use a Japanese light soy sauce if you don't have one. Japanese light soy sauce is sweet than Chinese one. So if you're using Japanese light soy sauce, you can consider reducing the amount of mirin used slightly.

Hi. I have a question. I work in Kanadaya and they put the Hanjuku egg in the pork broth for ramen. Does it have to the same or does it have a slight different taste ? Thanks

Hi Maya, so sorry for our late reply. Do you mean after the hanjuku egg is cooked and after the ramen is cooked, the restaurant serves the egg in the ramen bowl, right? No problem at all, the taste will not be altered because after soaking these hanjuku eggs for such long period of time, the marinade would have penetrated the egg white, making it very flavourful.

@@spicenpans I meant as in fury marinate the eggs in the Pork bone broth for hours and then use them for Ramen. Not sure because they marinate the eggs in the park bone broth for 12 hours or so to get that sweet texture. Was wondering if this is the same taste. But thank you :)

Hi Lyra. 4 hours would be best. The eggs may not be well marinated with only 2 hours - we tried once because we were too greedy. Hahah.

What happens if you marinate for more than 4 hours? For example, if I just left them overnight in the fridge....? Too salty?

You can go anywhere from 2 hours to 48 hours. Just do it to your taste.

I'm always challenge when peeling the eggs. Soft boiled egg white tends to stick to shell. Any tip?

Make sure you are using ice cold water, and peeling at 3 minutes. If you wait longer, it will be be harder to do.

ss4vegeta1 I made these for the first time in my life 2days ago together with shoyu ramen. 2 of the eggs I marinated for 4hrs or so. it tasted good. you can taste a good balance of saltiness and sweetness. the other egg I ate with the last serving of shoyu ramen. wow, the egg that was marinated overnight tasted even better! however, I do not recommend anything over 24hrs. unless you want to experiment.

Try a tiny pinch of baking soda or bicarb of soda into the water you boil eggs in :)
