great looking bird. I like to remove the rib cage, wish bone and breast bone before I cook them just so that when the cook is done I can quickly cut them up and not have to carve around any bones. I know a lot of guys who cook on reverse flow like to leave those in to protect from radiant heat off of the plate though. Either way, great bird and gorgeous setup!
Man that looks good! makes me want a Shirley even faster. I love my direct offset, but can't get the crispy skin. Great video. And its been in the 30s here in Ga Lol
