How to Make Tomato Wine

If you've run out of ideas of things to do with tomatoes, try making Tomato Wine!
Tomato Wine
3 1/2 quarts or so of water
2 lbs. of sugar or 2 lbs. light honey
4 lbs. ripe tomatoes, red or yellow
2 tsp. acid blend
1/8 tsp. tannin
1 tsp. yeast nutrient
1 Campden tablet, crushed (optional)
1/2 tsp. pectic enzyme
1 packet champagne or Montrachet yeast (Red Star Premier
Classique was formerly known as Montrachet)
Boil most of the water and all of the sugar or honey and skim if necessary. Wash the fruit. Peel, core and chop the tomatoes. Put them in a nylon straining bag and into the bottom of a primary fermenter. Squash the fruit with your clean hands or a sanitized potato masher. Remove the bag.
Pour the hot water and sugar over the juice. See if you need to add the rest of the water to make up the gallon. When cooled, add acid, tannin, yeast nutrient, and the crushed Campden tablet if you choose to. Cover the fermenter. Twelve hours after the Campden tablet, add the pectic enzyme. If you don't use the tablet, merely wait until the must cools down to add the pectic enzyme.
Twenty four hours later check the specific gravity with a hydrometer. You want the reading to be about 1.094. If it is too high, add water, if it is too low, add sugar. Once you have the reading where you want it, add the yeast. Stir daily.
In about a week, check the gravity with a hydrometer again. If it is anywhere between .990 and 1.020, rack the wine into a glass secondary fermenter.
Rack the wine again in the next two to six months, and wait for it to ferment out and clear. The color of the wine varies from a red gold to gold. Tomato wine is better when sweetened a little, so stabilize it and add 2 to 4 ounces of sugar in a bit of water and bottle. Keep six months to a year. Serve chilled.
After a week or so, check the specific gravity with a hydrometer.

Nothing to lose here - if you don't like the wine you can turn the wine into vinegar and have the best salad vinegarette ever! I've said it before but I have missed your videos so much and am SO EXCITED every time a new video appears. For those of us that don't have many (or any) experienced gardeners/preservers/cooks etc left, you and Bobby feel like visiting family whenever you share with us. I still refer people to your videos to build their canning confidence. You are so appreciated! Blessings ❤

I’m not much of a wine drinker for the same reasons, but I sure do like cooking with it. It sounds like this would be a great wine to cook with! 👌

“I didn’t see any sense in leaving a bag of seeds in there” - I made a fig mead with seeds and leaving them in gave it a beautiful and very unique aftertaste. Never tasted anything like it.

Glad to run into you again on RU-vid! This tomato wine sounds great; looking forward to making this. While I'm a dry wine person (I don't particularly like sweets) Chardonnay is not a bad type of wine. Now just have to get the gear...

I have watched more than a few DIY wine videos and this is one of the best I have watched. You put a ton of information in 8 minutes. The idea of tomato wine sounds awful, but I never knew it got this color, I kept imagining something like watery catsup with alcohol. Your wine looks great. A lot better than my first DIY mango wine. I can't drink alcohol anymore but if I did and had a lot of tomatoes I would make this for sure. It would be interesting to see if you can make a sparkling ( champagne) tomato wine. Glad you are back making videos. BTW, if you get a little rubber plug for one of your bottles poke two holes in it the size of your tubing and add a short piece to the plug and stick your tubing used for racking in the second hole and add the plug to an empty bottle , then apply a vacuum to the short piece of tubing and it will make it easy to rack your full bottle if the empty bottle is lower than your full bottle. You can buy or make little plastic tubing clamps to close the tubing off if you need to stop the racking at any point and allows you to do it without help or making a mess or losing your vacuum.

Thanks for the tip on siphoning. I've had a problem with using just a tube because I either end up with a mouth full...or fear of a mouth full resulted in not pulling hard enough and the wine surging back to the original container, stirring up all of the sediment.

A few weeks ago i tried it from ready tomato juice and used the tomato wine instead of vodka to prepare bloody mary cocktail. Became much much better than i thought. You should try it too.

I’ve made something similar but I used tomato purée instead of fresh tomatoes I think Americans call it tomato paste. Great video I love your accent. I’m from England.

Thanks a lot for this video. I did a lot of research and study on how to grow more tomatoes. Now, I have hundreds of them - just about ready to harvest. I am up to my eyeballs in tomatoes. I realized - "I cannot eat that many tomatoes" - so maybe I'll make some wine. I love how you changed from white to black to white during the video.

Check out lacto-fermenting some tomatoes. Basically, brine then with spices/garlic. I love them. Ill add a tomato to my store bought chili, have one with breakfast, English style. You can use Italian flavorings for pizza and bruschetta, or even salsa type.

@@markothwriter i couldn’t tolerate the lacto-fermented cucumbers’ flavor. However, carrots, cabbage, thin walled spicy peppers and tomatoes are my type. The cukes and thick walled peppers, like bells, held some off the fizz, which I also didnt like. I was worried the tomatoes would be the same, but they weren’t fizzy, perhaps because they weren’t stiff enough.

I have never heard of tomato wine before. This is my first year trying to make my own wine from my muscadines, but tomatoes sounds like an interesting project to try in the future.

Right now I'm working on cantaloupe wine. We bought a bottle from a winery in the mountains and it was surprisingly good. They also had a pumpkin wine that I loved.

@@imstillworkin LOL! I'm starting to get scared now, Susan. I love that stuff! A sweet old Jewish man who used to come into the cleaners where my mom worked always gave her a three bottle sampler box for Christmas. I always thought the Blackberry was the best. :)

God bless you. Followed this recipe and got the most exquisite wine just now. First batch that fermented for six months. The other two turned cloudy and stopped fermenting after only two. Tasted not so good, so I had to drink them by myself. Must have missed something when I was cleaning. But this batch is clear and fine and tastes good enough that I can share it. I don't know if I'll plant tomatoes again this year. I might skip this year since planting tomatoes two years in a row saw the tomato worms catch on. Maybe if I wait and plant something less palatable they'll die off. Whenever I do plant again I'll be sure to use this recipe once more and be extra thorough in sanitizing everything.

Great video. I've been making tomato wine for years. Your wine would have a deeper color and bolder flavor if you would have left the pulp in the bucket with the juice. And you could adjust the strength by adding water if you choose.

I bought all of that stuff at a wine supply store which is 70 miles from us. Since we don't live near much of anything, we consider that local. And to think that some folks in the government consider places a food desert if there isn't a grocery store every mile, lol.

i dont know if you read these, but if it helps; the reason to leave the skins and seeds in for the first 24hrs is that the pectic enzyme you add extracts some flavors and natural sugars. If you dont leave the skins, pulp and seeds you dont need to add that enzyme

I bottled some in November and at that time it had a VERY SLIGHT smell and taste of fermented tomatoes (which I think of as rotten tomatoes) that I thought was a bit objectionable. I've heard others describe that too. I opened a bottle a few days ago and that "funk" is completely gone. I made it sweet and not being much of a wine drinker I don't know what to compare it to. It's good enough that I plan on making a lot more this summer. I still have two gallons to bottle up, I'll make another video when I do.

@@imstillworkin Thank you for replying! Would be interesting to hear what it tastes like after further maturing. My understanding of making wine is that if you make wine from fruit, as opposed to a wine kit then it does need time to mature and improve, as was your experience with the tomato wine.

You have shamed me into trying to make wine the hard way. Lol. I usually make mine in a 1/2 gallon or quart mason jar. I bought all the gear you have and then decided that it was over my head so I searched out the 'easy' way on TexasPrepper2 channel. Only he calls it hooch. Hooch only uses the jar and lid, sugar, water, and fresh fruit or fruit trimmings. And then you just wait 6-12 months and rack and age till you like it. Fruit has natural yeast. Who knew? My first attempt at the proper way to make wine produced 4 gallons of very delicious muscadine vinegar. My most successful wine, tastewise, was yellow meated watermelon rind wine. Even tho the color kinda reminded me of pee.

Did you use campden tablets in your muscadine wine? They are supposed to kill the bacteria that causes vinegar.. it really isn't difficult to make wine this way. It's just a matter of adding a few ingredients on different days.

He had a stroke a few years ago, made a miraculous recovery then we stayed away from youtube for a couple of years so I don't know how he is doing now. I think of him often.

I also got an overload of blackberries, concord grapes and cantaloupes so expect to see wine videos on those some day. Also, plan on pear and pumpkin wines :)
