How to Make Tourtière Pie (Meat Pie)

We wanted to share this authentic French Canadian Tourtière pie recipe with you. So I brought in the expert on this - my Mom. She grew up in Quebec where this creation originated from and this recipe is what’s been handed down in our family over three generations at this point.

Pie Filling Recipe (enough for 2 pies)
- To a large pot add 1.5 lbs of ground pork and 1.5lbs of ground beef
- Add in 2 cups of diced white onion, 3 teaspoon of salt, 1 teaspoon of dried thyme, half a teaspoon of pepper, half a teaspoon of cloves, two large bay leaves and 1 cup of water
- On a medium high temperature, break the ground beef & pork up until you have removed all of the redness and no chunks of meat remain. Once the redness is gone, turn the heat down to simmer, put a lid on the pot and let it simmer for 45 minutes
- Peel two pounds of potatoes and cut them into small chunks. Add to a pot filled with water and boil the potatoes until done. Then mash/whip the potatoes.
- Remove bay leaves from meat mixture. Remove the majority of the liquids from the meat mixture and then add the mashed potatoes in and mix until even.
- Allow mixture cool down before filling your pies
Pie Crust Recipe (enough for 2 pies)
- Add 5 cups of all purpose flour and 1 pound of lard/tenderflake to a mixing bowl. Knead the dough until it is the right consistency (aim for no lumps)
- Now add 1 egg and add 1 tablespoon of white vinegar into a measuring cup. Fill up the measuring cup to 1 cup with cold water. Then whip the liquids with a fork until even and add to the dough
- Add 1 teaspoon of kosher salt to the bowl and continue kneading dough until done. You'll need to add the remaining 1 cup of flour to get the right consistency and workable.
Tourtière Recipe
- Roll out a pie crust base and put in a 9 inch pan. Ensure there is no air between the pie plate and the crust
- Add meat mixture to desired filling
- Roll out a pie crust top and place it on top. Fuse top and bottom of the crust together as shown in the video (see 24:30). Then poke a few holes in the top of your pie to allow steam to escape as it cooks.
- As an optional step, you can add an egg wash to the top of the pie crust to get an extra golden brown appearance to your crust
- Place pie into a preheated oven at 425°F for 15 minutes. Then turn the oven down to 350°F for another 30 minutes or until the pie crust is golden brown. Note, I kept mine at 425°F the whole time on the BBQ
- Let the pie cool down and serve!

My Mom passed away in September 2020 after a courageous battle with pancreatic cancer that lasted ~15 months. She was an absolute force and my inspiration on many fronts (including in the kitchen). I really hope you enjoy this holiday season with your family and make sure you unplug and really appreciate having them in your life. There's no greater gift in life than family and I hope you enjoyed this little glimpse into one of our family's holiday traditions. ❤

My Grandparents immigrated to Quebec from Ireland, had 7 children. When they moved to the West Coast of Canada, British Columbia they brought some Quebec traditions with them, one was Tourtiere pie for dinner Christmas Eve. My mother provided Tourtiere for Christmas every years of her life. When some of us moved away at some point during the year she would give us a couple pies for the freezer to be eaten on Christmas eve. My amazing mother passed away 2 years ago so its now my plan to continue the tradition. I have searched around and found your recipe. What I love about your recipe is it has also been passed down for generations. Just made the filling. letting it sit in fridge overnight and pie it up tomorrow . Only additions I added where a little allspice, white wine and finely chopped mushrooms. Ingredients I can remember my mother adding. Well let you know the results tomorrow, Christmas eve.

Due to my parents being French and our times spent in the Quebec Province of Canada, Tourtière is something my family became very accustomed to making during Christmas Eve celebration. Christmas Eve in French culture is where you party and exchange gifts while Christmas day is more of a religious celebration. it was so awesome seeing your mother sharing your family recipe for Tourtière pie. As a new fan of the channel i really enjoyed this video and its so nice to see certain traditions still being done in these crazy times. Oh my goodness! I'm so sorry to hear about her passing... I was JUST about to comment how good she is at doing this, and that she should have her OWN channel. Oh man, I REALLY am so VERY sorry to read about her loss... I hope and pray that she's watching over you as your guardian angel... I've been in a hospital like facility for the past ALMOST 5 YEARS due to having GBS (Guillain-Barre Syndrome). I have no memory of getting sick, and I JUST started getting my mind back VERY recently. TODAY is the VERY FiRST day that I TRULY feel 100% awake and aware. Before, I'd be saying the same thing to my family, and commenting on the same thing on RU-vid, but I now realize that I was wrong. I was only back part time. Upon my awakening, I found out from my parents that I ACTUALLY stopped breathing at one point during my hospitalization, however as y'all can tell, they were able to successfully resuscitate me and bring me back to life... Wow, just typing these words out is REALLY making me think about what everybody was thinking and going through, while that craziness was happening to me... I realize that even though I was stuck here at this facility and going through ALL of this stuff, my family and my close friends were stuck at home while continuously worrying about my health and whether I was STILL ALIVE or not 🤔😳🤯... I can't imagine what they were thinking and going through when this first started happening to me. I can't imagine what they were thinking when they found out that I stopped breathing and had to receive CPR... I thank God for the privilege of being, and the opportunity to be, alive and back in my mind all the way ✝️🙏🏽😇🙏🏼✝️!!

And thank you for sharing your time with your parents with your viewers. I had a great childhood and adulthood with my parents and miss them every day, along with my Grandmother, who taught me the New Hampshire Old Ways that I live today. The time with them was priceless! I love this video! I made this and it was so beautiful and delicious!!! I can sympathize with you, because I lost my mother last August, 2020 and it has been very difficult! We cooked together for many years and this video is very touching to watch. Thank you again for this!

You forgot the celery very important for a traditional Tourtière. Altho it is still a very interesting recipe. I like that you used traditional Canadian ingredient brands.

You use what you got. The recipe I got was likely from a potato farmer. No celery, but celery salt. All ground pork, no ground beef.

Tourtiere and meat pies is not the same ,the meat is not treat the same way, meat pie is boil meat 3 sorts usually and it would be chicken, pork and beef ,sometime wood meat like deer ,rabbit or others with lots of onion and salt and pepper, thicken with flour so its not runny and some put potatoes cubes like the size of the meat....tortiere are ground beef and spices ,not the same taste at all...like bolt....
