Tsukemen is cold ramen noodles served together with a hot dipping broth containing plenty of ingredients. Tsukemen has become much popular in Japan these days. The tangy soup is very rich and tasty.
How to Make Tsukemen
cookingwithdog....
(serves 2)
2 bags of Fresh Ramen or Tsukemen Noodles
100g Pork Belly Slices (3.53 oz)
400ml Chinese-style Chicken Stock (1.69 cups)
(400ml water + ½ tbsp chicken stock powder)
2 tbsp Sake
A medium to large clove of Garlic
A piece of Ginger root about two to three inches long
1 tsp Dried Red Chili Pepper that has been sliced into rings
3 tbsp Soy Sauce
1 Naganegi - Long Green Onion
40g Shiitake Mushrooms (1.41 oz)
40g Shimeji Mushrooms (1.41 oz)
½ tsp Sesame Oil
1 tsp Vinegar
1 Soft Boiled Egg
Chopped Spring Onion Leaves
Katsuobushi Shavings - also known as Bonito Flakes
Grated Garlic

中華生麺(太麺):2玉
豚バラ肉(薄切り):100g
チキンスープ(中国風):400ml
(鶏ガラスープの素大1/2を溶かしておく)
酒:大2
にんにく:1かけ
生姜:1かけ(親指大)
唐辛子(輪切り):小1
醤油:大3
長ねぎ:1本
椎茸:40g
しめじ:40g
ごま油:小½
酢:小1
半熟卵:1個
青ねぎ(小口切り):8本分
削り節:少々
おろしにんにく:お好みで

For tsukemen, you can use chicken or beef instead of the pork :)

i remember that naruto episode when he went to ichiraku to eat ramen but turned out it has changed into a tsukemen only place lol :"D he dumped the noodles into the broth and ate it like ramen tho

She was struck by a car while riding a bicycle, and spent quite a long time in the hospital and then undergoing recovery. Fortunately, she has uploaded a few new videos lately appears to have bounced back, thank goodness. Watching Cooking with Dog always brightens my day.

I have all the ingredients and a lot of Japanese cookware... sometimes when I'm setting out to cook something I think of Francis! I think "I have everything but the dog"! There are several things I say where I sound like Francis, like "dashi soup".... I really enjoy this channel, just learned a few things here.

I made this recipe for Tsukemen last night. Thank you for the instructions, Francis! I used fresh somen noodles as my Korean shop doesn't have fresh ramen. I used chili powder instead of chili pepper rings. It was a delicious meal! I made 1.5x the amount of broth (and a bit more mushrooms, and a 2nd long green onion), which was the perfect amount for myself and my husband after a long day.

Hi! I am just a random teenager from Singapore and I really love this channel! I found it a few years ago and this is the very first video I watched! This channel is somehow better than other Japanese cooking channels as the instructions are much more precise and the recipes aren’t very complicated. I’ve tried a few out and they are really delicious! This tsukemen soup is really tangy, savoury and refreshing! I really miss Francis now that he isn’t around anymore, but I hope the creator of Cooking With Dog and chef will remain healthy and continue to share more delicious recipes! Take care!!!

@thelumbahjack In Japan they call the foam "aku", which is basically coagulated blood/proteins/etc. They skim it off because it brings a harsh and bitter taste to the broth, along with a slimy consistency. Japanese cuisine also values clarity in all of their broths, especially in Kaiseki cuisine.

You can freeze mushrooms!? I did not know this. It is rare for me to find certain types of mushrooms where I live. I am going to start freezing them so that I have them when I want them. Thank you so much for the tip!

This. Was. Delicious! I had to switch some ingredients (button mushrooms for 'shrooms and smirnoff instead of sake...) but it was sooo tasty all the same. The broth was heaven. It was also quick and easy to make. Thank you so, so much for this recipe!

Just tried this today. It was gorgeous, salty and flavourful. Couldnt find thin slices of pork belly so had to use thick pork belly which was chunky instead. Pork belly was really fatty and delicious.

It's just hard to satisfy those people. When there are subtitles available, they're too lazy to read them and complain about the accent. If there were no subtitles available and the video were all in Japanese, they'd complain and ask for subtitles.

Skimming the foam is to keep the broth clearer and cleaner. It's all the denatured junk from the pork oils/fat. Sometimes the foam also carries some of the denatured proteins from the veggies.

no. its the same cut, but bacon is processed with spices and other stuff.

Pork belly is bacon that hasn't been cured or smoked yet. There's an asian market near me that sells it. I tried to make bacon once with a salt and sugar cure and smoked it but i cured it too long and it was like salty jerky. so I used it in my cabbage instead. It was Amazing.

boil your water, and when its boiling, put the eggs in for about 5 minutes. take them out and put them in freezing/cold water. then peel them. the inside should be a little liquid still. thats how i make them :)

Lara May Another trick is to poke a small hole with a thumb tack on the fat end of the egg. This prevents the egg from cracking.

another way is to put the eggs in the water and turn off the water when it begins to boil. wait for 10 min or so. But it's best to go with the way iSugarRushO suggested

I do not believe that is the reason. Canned broth is easy too, and tastes much better. I've noticed it with many of the Japanese chefs on RU-vid. I'd like to hear from one of them.

@baboon500 It is the difference between tsukemen and ramen. Tsuke means dipping. Recently, Tsukemen has become popular in Japan.

@edenrdrgz It stops the noodles from cooking, and keeps the firm texture. Even after you take something out of hot water, the fact that they are still hot means they will continue to break down. When you add the cold noodles to the hot broth, it just warms them up, not necessarily cooks them any further.

can you do miso soup? i went to a japanese restaurant called ninja in nyc and the miso soup came in a rectangle ceramic where the soup had been baked with dough over it. you had to break the dough to eat the soup with it. it was DELICIOUS. the soup also had shimeji mushrooms. PLEAS PLEASE PLEASE show us how to do this! :D

@jualkyn The first pork slice was for the fat. Usually you want to add oil when you cook meat, but with pork it isn't necessary because of the fat it gives off. The others were probably put in later in order to keep the meat savory. If you put the meat in for a long time, it sometimes becomes very chewy and tough.. As for substituting with chicken, it lacks the fat of pork..so you'll need oil...im not sure what it would do to the taste, but you can always try it and respond with the results.

to your second question, pork belly is what bacon is from, except they trim off the excess fat to make bacon, you probably could use bacon.

I know toy poodles are occasionally arketed as "teacup" because of how tiny they are. My ex's mother had some of them, and the puppies were insanely tiny. Not the cutest things though, either as pups or full grown. I like the way the laws are set up in places like Florida- in order to breed dogs, whether for your own use or to sell, you need to be a licensed breeder. Really cuts down on puppy mills and stuff like that.

Last month Osaka trip, I managed to order this dish. It tasted sour and I wonder what was it.. So it was the vinegar!!! Will cook this without vinegar and add chili oil :))
