How To Make Turkish Cotton Candy, Pişmaniye Nasıl Yapılır.
Until recently pişmaniye used to be made at home in most regions of Turkey, but this tradition is now rapidly disappearing. Today the manufacturing process is partially mechanised.
Alternative names
There are many different Turkish names, used in different provinces, the most common being tel helva, çekme helva, tel tel, tepme helva and keten helva.
Origin and etymology
The earliest Turkish reference to pişmaniye is a recipe by Şirvani, a physician writing during the 1430s. The Persian form pashmak, related to paşmīna and paşm, the origin of the Turkish name pişmaniye, occurs in the poetry of the Iranian poet Ebu Ishak, also known as Bushak (d. 1423 or 1427). "Pashm" in Persian means wool, and "Pashmak" means wool-like.
Another theory is that it may be of a Coptic origin from :'ⲡⲏⲥ: pis": which means :" to mix flour with fat" , and "ⲛⲏⲓⲛⲓ: nani or mani ": which means : "honey" , this candy found in Egypt, known as "halawa shaar حلاوة شعر" which means : "hair candy".

American here who just picked some of this up from a middle eastern market today. It's fantastic! It has the texture of soft wool. American cotton candy is like polyester in comparison.

I bought some of this at a Turkish market in France and it was amazing (I bought a chocolate-covered kind called "Efsane Pişmaniye" from the a brand called Çiloğlu). I didn't know that people could make pişmaniye themselves.

I didnt know this exist in Turkey too. I'm half Chinese and Indo and both countries have that too. In China they called it "Dragon Beard" and in Indonesia theg called it "Gulali"

Not enough coating before the making more longer rope, but it looked amazing if I had done it I would of tried to make it look like fabric being torn apart good work though

I always try to pick out something new every time I go shopping. I picked up a package of this for less than $5 thinking it wouldn't be all that great. I feel sick to my stomach because I literally could not stop it. There is no comparison to American cotton candy. Although they are both sticky the Turkish cotton candy tastes a thousand times better and not as sweet. The one I purchase in Phoenix was actually made in Izmir, Turkey. I totally suggest that you buy this, it's so good... just try not to eat the whole package.

THIS IS IT? The flour still looks raw at the end of the video (although pre-heated), so I believe it all needs some heat treatment afterwards?

No it's real name is Pismaniye. And the idea it might from "pashman" is one of the theories. That doesn't mean it originates in Iran.

​@@Tomski_19 You should not be using flour. The correct ingredient is a mixture that look like paste. It has a beige color and it's made with tahini (sesame). I am not sure at all about the ingredients in the mixture (i would like to know), but you can see it in others video the authentic way. in this video ---> watch?v=Ns_CExUooNg and even in this video directly from istanbul -----> watch?v=A4yKG2V74ag. What this guy is doing ressemble to dragon's beard candy from CHINA. The final texture is not the same neither the taste. Pismaniye is much more soft you cannot imagine, on the touch, you can feel and see how soft it is. It's so soft it feel like soft hair fallen from an angel or a fairy.
