In today's vegan What I Eat In A Day video, I make a plant-based version of fish tofu. Which, confusingly, isn't normally made of tofu (just fish). So it's only fair that my version is only made of tofu and not fish, right?
Then because this vegan fish tofu (or vegan fish balls or vegan fish cake depending on how you shape them) is so delicious, I proceeded to make 3 vegan meals with it.

-- Vegan Fish Tofu Recipe --
1. puree:
350g (12.3oz) drained and blotted dry extra firm tofu (pls weigh it!)
3 tbsp olive oil
2. mix in:
50g tapioca flour or potato starch (tapioca is better)
3/4 tsp salt
3/4 tsp msg or mushroom bouillon (msg is better)
3/4 tsp onion powder
3/4 tsp garlic powder
3. mix in:
50g vital wheat gluten
and knead until combined.
4. In the meantime chop up a few tablespoons of mixed veggies (such as red bell pepper, corn and peas). Knead into the dough, cover and rest 20 minutes.
5. Divide and shape as desired. Steam over high heat for 30 minutes or until cooked through.
6. To fry, heat oil to 325-350°F. Fry just until lightly golden.
