Ciao! Yes, 00 flour can be used for vegan pasta but the results will be slightly different and the dough a bit more soft making it difficult to create some shapes. Hope this helps 😇
Thank you for this video! May I ask, how is the chew on vegan spelt pasta? I've tried whole grain flour for pasta and found it gritty and not chewy (al dente?), and I wonder how spelt compares with traditional wheat flour for pasta (including all-purpose). Thanks for your help!
You can keep the dough for several hours once you've made it, but be sure it's covered so it doesn't dry out. Once you've formed the dough into your pasta shapes, you can cook immediately, leave them to try out a bit to be cooked the next day, or freeze to be cooked at a later time.
