How to make Vegan sugar cookies | No chill, easy to make recipe | Dairy free! Gluten Free Option!!

Are you vegan and want to learn how to make sugar cookies? Or perhaps you are a baker that wants to offer vegan cookies to your customers? This recipe has also been tested with gluten free flour with great results (see note further down in the description).
In this week's bake along, I'll walk you through the entire process showing you how easy it is to make no chill vegan sugar cookies. I will be using my regular no chill sugar cookie recipe and making 2 small modifications to make them vegan. It's that simple and this is a great sweet treat if you have an egg and/or dairy allergy. They are perfect when decorated with my vegan royal icing or vegan buttercream, or even on their own with a nice cup of tea. Why not try vegan fondant on them as well. In this bake along, you will learn...

... as well as a wealth of other general cookie-making tips as I show you the entire process from make to bake.
Ingredients:
220g plant-based butter (1 cup)
200g sugar (1 cup)
2 tablespoons plant-based milk (30ml)
2 teaspoons flavouring (I use vanilla bean paste) (10ml)
375g all-purpose flour (3 cups)
1/2 teaspoon salt (2.5ml)

*** Update to add that this recipe has now been tested with Bob Mills 1:1 gluten free flour and baked wonderfully. You can straight substitute with the same amount listed above.

I made these with gluten free bob’s 1 to 1 flour and they turned out ok, but a bit grainy feeling after baking, which means, if you use gluten free flour, you should probably rest it for a bit in the fridge (I dunno maybe 30 mins?) and add 1 more tablespoon of non-dairy milk or butter. That would help with the grainy texture a bit. Otherwise very simple recipe!

Thanks for your feedback and I'm happy to hear that you tried the recipe. I've never experienced that consistency issue when using the 1 to 1 flour. I wonder, is it particularly dry where you are? That may have contributed to the graininess. I normally test the dough before baking to see if it needs a little bit of extra moisture. If you roll a small amount up in your hand and it feels crumbly, definitely add a little liquid to help it combine better. Hope that helps.

@@BakeAngel I did the test. It was not grainy at all beforehand, it was smooth when rolled. But yes, I live in southern California. However, in my gluten free experience, gluten free flour usually needs slightly more liquid than regular flour. Which may also be a California thing.

hello! just wanted to stop by and say that i tried these today and the were so yummy! i am very much a cookie beginner so this was a fool proof recipe, kept their shape and tasted great! next task is the royal icing!

These are sooooooo good!!!! Even better than the non vegan sugar cookies I made last year. I was too lazy to make icing so I sprinkled sparking sugar on top

Yes, absolutely. To freeze the baked cookies, pop them in an airtight freezer container and wrap it with plastic wrap to avoid freezer burn. Defrost the container at room temperature before removing the cookies.

@@BakeAngel thank you so much! I was a little worried after I baked them bc they seemed pretty delicate, but after a whole night to sit, the cookies firmed up and changed flavor and actually were a lot better the second day.
