Hi mohsin , I like your anchoring , amd I am chef by profession with diploma in Hotel mgt The reason i am telling you this bocz these chefs comes from humble background , they have taste in their Hand , Hence please dint embarrass them by asking qty , I can understand your point of view but one thing you can do rehearsal with them before final shoot So they are prepared Bcoz most of the time they dont know actual gram of cumin , oil etc and they feel very shy as I know working with then as their Boss , tour intentions are not wrong but cud be Harsh on them some times , keep up the good work and do reply if think its right , Love from UK

No one makes masala they normally buy from local vendors in bulk or Everest or Badshah No commercial kitchen has time for Masala making or any other old school preparation...
