How to make Vietnamese vegan broken rice plate (vegan com tam). Hope you enjoy it!

Recipe/Ingredients:
Lemongrass soy curls (updated recipe from banh mi):
60g Butler soy curls
1 garlic clove
10g lemongrass
20g shallots
1/2 tbsp cane sugar
1 tbsp canola oil
1 1/2 tbsp tamari (soy sauce)
1 tbsp pineapple juice
1 tbsp lime juice
Black pepper to taste
1. Rehydrate soy curls according to directions.
2. Chop garlic and lemongrass. Crush in mortar and pestle. Add to blender.
3. Chop shallots and add to blender.
4. Add cane sugar, canola oil, tamari, pineapple juice and lime juice to blender.
5. Blend until smooth.
6. Strain marinade and season with black pepper.
7. Add soy curls to marinade and mix well.
8. Let soy curls marinate in the fridge for 1 1/2 hrs.
9. Cook soy curls over medium heat until golden brown.
Tofu loaf:
250g extra firm tofu
100g rehydrated mung bean threads
50g rolled oats
25g carrots
5g dried wood ear mushrooms
15g green onions
1 tbsp miso
White pepper to taste
1. Soak mung bean threads in hot water for 10 mins. Cut mung bean threads into smaller pieces.
2. Soak wood ear mushrooms in hot water for 10 mins.
3. Use blender to crush rolled oats.
4. Smash tofu.
5. Chop wood ear mushrooms and green onions.
6. Grate carrots.
7. Add all ingredients into a bowl and mix well.
8. Add mixture into a baking container* and bake** at 350F for 50 mins (time & temp. vary).
9. Let loaf rest and cool before use.
*I used a 3.7” x 3.7” x 2.5” food-grade silicone mold.
** I first tried steaming, but found the loaf retained too much moisture and thus too soft to handle.
Tofu, potato, jicama hash (bi chay)
200g potato (russet)
150g jicama
40g fried tofu (abura age)
Salt, white pepper, toasted jasmine rice powder to taste
1. Julienne potato, jicama and tofu.
2. Soak potato in water to reduce starch.
3. On medium heat, cook potato until al dente.
4. Add jicama and cook until heated through.
5. Add fried tofu and cook until heated through.
6. Remove from heat and season with salt, white pepper and toasted jasmine rice powder.
To build the plate, serve with:
broken rice
tomatoes
cucumbers
red chilies
mo hanh - scallion (green onion) oil
fried shallots
do chua - pickled carrots & daikon (see vegan banh mi pt 2 for recipe: • Vegan Banh Mi [2/3] Pa... )
nuoc cham chay - dipping sauce (see Vietnamese vegan crepe for recipe: • Video )

My gosh your plate is looking spectacular, like seriously is amazing! The only thing missing in the real dish is a fried egg but we don't need it here. I've been eating this plate nearly every morning before going to school when I'm still living in Vietnam. Thank you so much for making this and sharing it with everyone. P/s: I had try to make your vegan Pate for vegan banh mi and I'm totally addicted to it! It tastes so delicious and my mother loves it too. Thanks again :D . I personally like to eat it with rice but it also goes really well with cooked sticky rice or "xôi" in Vietnamese. I know many people doesn't like sticky rice 'cause it IS sticky :)))~ and it tastes awful when it's cold but if you haven't tried to eat the Pate with sticky rice, you should try it for one :)

however Canola is one of the more TOXIC oils in the world, it's GMO by default even though you can find many many versions of it in organic stores selling it. I come from Canada, it is a plant that is legally owned by Canada because it was created (yes in a lab) from the cotton seed/rape seed plant (already a fairly toxic plant in terms of biological activity as it is well documented). So please revise your recipe when you have time to include an actual oil that is easier on peoples bodies such as hazelnut or macademia nut, or even coconut...if you are a vegetarian you could try gee from properly treated cows...which are next to impossible to find on this earth.

It was too long ... I couldn't watch to the end. Thank you. I'm sure this recipe is amazing! However, it's like a 3 hour Martin Scorsese film and I ant do that. Edit, cut, please!

This is one of the best vegan (cooked) food recipes I have ever seen...do yourself (and others) a favor and revisit it, it's mind blowing how good this presentation is. Also NOTICE the package of soy curls, now contrast this with daiya type insanity...taste is most likely worlds apart as well, their pizza tastes similar to cardboard, and with all the chemicals and additives it's little wonder why...look glad that companies are jumpin on the vegan bandwagon, yet you can see how many of the products line up against real food (un-processed). Funny that you mention how long winded the videos are, as much as I love your work (ED?) I find that your videos drag you through the mud in a similar way...so maybe you could take some of your own advice, or just give a little more luv to the OP video creator, anyhews, like you both!
