GANACHE RECIPE| NOTES|
1300G ( 1.3KG) WHITE CHOCOLATE
600G DOUBLE CREAM
Add cream to white chocolate and microwave for first 4 minutes at two minutes intervals. Shake mixing bowl gently and return to microwave for another 4 minutes at two minutes intervals.Stir together gently until ganache is mixed in with no chocolate lumps left. Microwave for additional 1-2 mins if needed.
Leave to set at room temperature or in a fridge for up to 8 hours before use.
RECOMMENDED RATIOS FOR GANACHE
Dark chocolate ganache 1:1 ratio ( eg 100g of dark chocolate + 100 mls of double or heavy cream)
White chocolate ganache 3:1 ratio ( eg 300g of white + 100mls double or heavy cream)
** There is a difference between White chocolate and cooking white chocolate.
Milk chocolate ganache ratio 4:1 ( 400g of milk chocolate + 100 mls double or heavy cream)
