would I be wrong to mix either cucumber, coriander, pickled daikon and carrots into this ? I really like brightness and freshness these ingredients bring.

The steel plate doesn’t stay flat on the boiling water so my laphing is thicker on one end and thinner on the other and the taste of thick laphing is not pleasant at all
Use a little heavier steel plate so that the boiling water won't move the plate. Else you can put the stand in the middle and place the plate on it. This way the plate will stay flat and laphing will be evenly-cooked. Hope this helps.

My Laphing story: I was in college, had a stay back for quite a while. The college was nearly empty...I didn't have money to buy myself food... I didn't have anything all day long. I was drained because of the heat and then this one girl came up to me. She asked me if I had food and I said I didn't. So she was giving me her twin's food. I kept saying no no it's alright, I'm not hungry but my stomach growled. She then gave it to me, told me to have it and went back. I sat in an empty room and looked at this for the first time. It looked so good and when I took the first bite...I can't even tell you how SATISFYING that was. It was the only time I had Laphing 4 years back. I tried to go to the restaurant from where she got it but they ended up shutting down. I can't wait to try this recipe.

I have never had Laphing before...I just followed your recipe...it was good but too much effort compared to the taste...may be somewhere I did wrong but I followed everything strictly...I can say it reminds me of Khandvi ( gujrati dish) texture wise but something was missing.
Once you separate the gluten from the starch. Wash the gluten thoroughly under the running water to remove remaining starch in it. Then it will form a solid dough.
its really easy when you look at the video, but it really needs alot of effort and time when you make it for sell, i sell my homemade laphing too and there are times when i got lots of orders, its really very tiring and time comsuming, you are luck you can buy it for 40rs only
