Tomatoes in glass jars taste so much better than commercially canned tomatoes! Not even close!

Not true. They are certainly not the same -- especially squash and other cucurbits. Commercial farmers use seeds coated with neonicotinoids. These are systemic insecticides that get inside the plant and subsequently the fruit. The squash, cucumbers, melons, etc., we grow don't have any of those inside them.

OldPossum I start my own seeds, nurture them until the day I pick them, then can them. To me they taste better than anything I could purchase in a store. That being said, I politely beg to differ with you. You can be as smug as you want about what you think, but it is your opinion. I don’t need your scientific probabilities, I know what I taste and that is not probable that is factual.

To keep pathogens at bay use a little citric acid and keep the PH below 4.6. Botulism won’t grow at those PH levels. You don’t need to cook them so much that all you have is tomato juice. 1/4 - 1/2 teaspoon depending on variety of tomatoes.

I read if you put a tablespoon of butter in the saucepan with the tomatoes it dissolves the scum/foam. Worth a try that way you don’t loose too much of your produce. I did try it when I made marmalade but haven’t tried it with tomatoes. Let me know if you try this how it goes. Thank you ❤️

A little trick I learned I don't know where, no one in my family for 3 generations back has ever grown even a tomato but I cut a small X on the bottom of the tomatoes before dropping them into the hot water and leave them in for a minute or less. This tomato peels easily and remains clean and firm so as not to be such a mess wile Handling and coring them. This also works well if you have family that doesn't like the skin on their tomato in a salad or sandwich. I've had a vegie garden for the last forty of my 68 years. Mike from Maryland P.S. Heard you can reuse canning lids. Pretty sure the Amish do. Have to make sure you don't crimp when removing. Only if they are bent are they bad. Soak them in warm water to plump them back up. Never tried it but will now. These days I'd never throw away a good used lid just in case.

Hey, so a variety of corn I 'm growing this year, True Gold, is really suffering to Japanese beetles (zone 7B). I did have a sulfur deficiency but I have already resolved that and added nitrogen and compost; in an attempt to 'strengthen' the plants before they were damaged beyond regeneration. I am laying out plenty of birdseed which has attracted several crowned birds like cardinals and pileated woodpeckers which I see eating the beetles. In addition, I have been spraying the foliage with doctor Earth's Organic fungicide and insecticide, better known as 'Final Stop'. after the first week or two, the corn seemed to continue to be eaten as if I sprayed nothing at all, and now at week 3, the Japanese beetles are significantly worse than before I sprayed. Side note, I have a substantial amount of Dogfennel that seems to house hundreds of Beatles! do they multiply in Dogfennel? All my attempts at eradicating the dogfennel on my property have failed miserably!! so any advice as to how to eliminate it? Which consequently, might reduce my Japanese beetle population? My next attempt is to hang beetle traps, but I would rather control them through removing their habitat, if possible anyways.
@gardeningwithhoss
@gardeningwithhoss 4 года назад
Dog fennel doesn't tolerate close mowing. I would say mow or weedeat the area frequently and the grass should eventually out-compete it.

@gardeningwithhoss

Jars do not need to be sterilized before canning if they will be filled with food and processed in a boiling water bath canner for 10 minutes or more or if they will be processed in a pressure canner. Filled jars that will be processed in a boiling water bath canner for less than 10 minutes need to be sterilized first. If your hand are cleaned, it is not a problem.

When is it best to start rooting sweet potato slips,? Composting corn stalks Good or bad?
@gardeningwithhoss
@gardeningwithhoss 3 года назад
Depends on your growing season. Down here, we can plant sweet potatoes as early as May and as late as July. But they need at least 90-100 days of warm weather. You can compost corn stalks if you can get it hot enough to break down those fibers.
