With a few exceptions, food colors are dyes, which means you're not dealing with pigments you're dealing with molecules. Molecules have a tendency to go through things like frosting and I've even had molecular dyes go straight through dried oil paint films and varnishes. There are some materials like shellacs that will keep them in line, but that's why they often bleed. ❤ I hope that helps!
I addressed this in my tiktok voiceover where I could talk a little longer. I honestly don’t like to shop there, which is why I also listed two other options for food coloring. But unfortunately it’s the most cost effective place to get food coloring and the only local place around me that I can just purchase one color at a time vs larger more expensive box sets.
don't quote me or anything as I don't know, but it sounds to me is using the white thickens and holds the pigments better rather than no white and just transparent is more runny. but I don't know, just a guess
