It is great to have canned chicken on hand. easy way to whip up a meal. I get it in a vcan from walmart occasionally. I never have an extra ten pounds of meat that I could prep. In my online cart i have a big bag of beans so far. I never tried canned turkey, COOL!
My mom canned meat but I never saw how she did it. So thank you for the video on it. She would also pack meat, potatoes, Carrots and an onion slice in a pint or half pint jar and that way she’d have a ready to go quick meal for herself.
Who cares what the product looks like in the jar of chicken.. nobody sees the “ugliness” but me. The convenience is unmatched and we know exactly what is in the jar!! I had some older canning lids. They worked perfect for me. Wish I had more. The quality seemed so much better than what we see today. Nice tutorial. Canning meat is so darned easy!!
I always enjoy your canning videos. I don't can, don't plan to start, but I love to watch 😄 It's a sentimental thing for me; I 'helped' my grandmother when I was young, but she stopped in later years and never passed the skill on. I swear to you, I didn't know you could buy vegetables at the store until we moved to town when I was 10-11 😂

I’m appreciative of you sharing, so many of us are new to canning and I watch all the videos I can to keep learning. I worked restaurant’s, I catered and worked buffet’s, I’ve cooked for a lot of people but I never tried canning. We all need to learn to process more foods especially now. I’ve been concerned with GMO foods and everything else used in processed foods so now I know what is in my meals! Nutrition is so important in todays world because it has everything to do with our health. I believe the foods we eat today are causing a lot of. It and sugar is one of them! I’ve learned a lot about treating cancer ( naturally), many change their diet completely and become healed without doing chemo. Thank you again
Ms. Vickie I have learned so much from watching your channel. I started canning from watching you. I canned “ugly” chicken yesterday for the second time because we’ve eaten all of my first batch. It is so easy to make a meal with it and it’s delicious. I’ve also made and canned your family spaghetti sauce recipe. It is the bomb! I’ve had to keep my older children from stealing a jar! :) Thanks so much for all that you teach us!!
Thank you for this step by step lesson. I remember all the canning that went on when I was a child especially when there were gluts of fruit and vegetables in the garden. I think I might give it a go this summer! In the UK we call the process “bottling.” Very much enjoy your videos and Miss Lori’s too!
I love that app! It is so helpful for forgetful people like me. I have to set timers and I’ve found it’s also helpful to write down what time to add the weight, or turn off the stove.
Finally decided to try my hand at canning meat, so I’m doing my video research. You are the first person I’m watching for the Canned chicken. Great tips with the vinegar, being patient with filling process and with the testing of the the lids. Very valuable for very loose bands and it made sense. Your final pic at the end made me smile. I have canned chicken a number of times, but always loose-packed and added seasoning and water. I like your method as it allows for more chicken in each jar and less lids used as well. Thank you for sharing. Always enjoy your videos.
Excellent demonstration video. Also thank you for bringing my attention to the canning app. I installed it and I think it might be useful. I have about 10 pounds of chicken breasts that I am planning on canning. I paid over 6 dollars a pound for chicken breasts. The prices are becoming concerning.

It amazes me Ms. Vickie that the top rack jars don’t sit in any water yet do ok. I know that’s the way to do it. I’m not questioning you, I just always am amazed that canning jars won’t burst sitting there dry under that much pressure. I love canning and have done it for over 30 years but still love it and love learning new things. This will be my first year canning meat. I spent several summers in my late teens doing canning of tomatoes, cabbage, juice, tomatoes..... And I barely remember doing any of it. I do remember we had a scalding hot dishwasher, and a mill thing with a crank on it to make the tomatoe juice. LOL I mean, that work was a big deal and it's like I've been hit with one of those men in black flashers, I cant recall all those different methods.
I water bath canned for decades. Im 65 and just got over my fear of pressure canning. After doing it the first time I scratched my head wondering what the heck I was afraid of 🙃

I just foun your channel. You are a good teacher. My mom is teaching me to can at 57..lol They always scared me, like having a big bomb in my kitchen. I know ridiculous..lol Together we are learning to can meat though, and we will be doing chicken next week.What about a chili base of Tomato juice burger and lots of beans, someone said I should have added vinegar, and we did not, and now I'm worried. ???
Very good video for those new to pressure canning. I finally got brave enough last year to can with a pressure canner & canned chicken, roast and pork butt. Yum. Good, fast, convenient.
Hi Vickie, New here and loved your video. No, have not yet canned - have the canner, water bath, all the tools & jars needed - maybe a couple weeks to a month will start to do the actual canning. Almost saved up enough butter to make ghee by the canning process - that is where I will start. Then on to meats. And veggies. So thank you for being so thorough & explaining the whole process to take the fear away. Judi S.
Great vid. I raw packed chicken breasts in quarts for the first time last week. I canned them whole, think I may have made a mistake by not cutting them up first.
Can we can previously frozen chicken? I downloaded that canning app, it looks good. I am getting ready for pressure canning, I just ordered my canner it's coming in about 1 1/2 weeks. I'm so excited can't wait.
You said raw pack you want cold jars and to tightly pack the chicken. But the USDA Complete Guide to Home Canning Guide 5 for raw pack chicken states to 'Fill hot jars loosely with raw meat pieces, leaving 1-1/4-inch headspace. Do not add liquid." Why the difference?
We have meat birds and I m considering pressure canning a couple using the raw pack method. Can you eat the chicken straight out of the jar on a sandwich or make a cold chicken salad?
lol I agree it is raw pack chicken... not ugly chicken... I no longer raw pack anything. I like the consistency better par cooking and then canning in broth. Raw pack chicken does make the best chicken salad that I have ever seen, but we don't eat that Much Chicken salad.
I just canned 20lbs of boneless, skinless breasts & thighs. I used a cocktail muddler to stuff the jars - I don’t know that it’s ever been used for cocktails, but it’s really handy for stuffing chicken in jars 😁
I processed this jar 9/19/20. I just noticed it again 2 days ago, and it is still a solid seal! Many of the newer lids fail to seal at all. So far I have found Superb brand to be the most reliable.
I bought thirty pounds of chicken breasts and done this step by step. My jars sealed nicely. I let them sit out on my table undisturbed for two days. I put them in my basement where it's nice and cool. Couple days later all my chicken went bad.
I've heard about watched alot of canning meats. I'm a newbie on canning meats. A lot of people have commented, that chicken breast are tuff and rubbery. Is this true? I would like to can chicken,but not thighs. Thksssssss
If you come back to test the seal after 24hrs and you sadly find one that hasn’t sealed, is that meat still ok to eat that day, because it’s been sat at room temperature? My understanding is that the canning process sterilises the contents and the seal prevents any microbes getting back in during storage, and so not much will have got into it in the meantime. BUT it’s been at room temperature. What do you think please?
I think it's up to 10yrs, but you need check lids every year.if you're rotating foot you aren't gonna have a problem....ball says 18 months, that's a blanket statement to cya.
Thank you for the reply. I canned 10 pints last Friday. Boneless skinless chicken breasts were on sale for $1.99 a pound, I purchased 18 more pounds. Will be canning these tomorrow. I found the most useful part of your video, was when you said each pint is about 1 pound. That helped me tremendously. I never knew how much to buy. Thank you!
