One lesson I learnt from Argentinian and Peruvian friends is to make your chimichurri the day before. By doing this you bring out all the flavours when combined. Also brings out a little more heat.

Beautiful! I like that you kept it simple without starting up a second set of coals just for the sear. In addition to the sauce on top or on the side, like to put some sauce on the board too, and the steak on top. The heat and the juices do something miraculous. Also, is that a brand new 1980s GA?
