Utensils and small things that may need cleaned during operation. Wash, rinse, sanitize. 4th is for hands.

@@positivelynegative9149 commissary is another name for a commercial kitchen. It is where you store, prep, and if need be, cook the food you will serve. It is also a place that you fill fresh water, dump waste water, and some commissaries offer a place to store your cart/ vehicle. Some commissaries are commissary kitchens specifically and only offer those specific services to food vendors. Then there are commercial kitchens. This is any kitchen and could be in a restaurant, elks lodge, etc, that also serve to the public. I found the best way to approach a commercial kitchen, is to try and find one that started out as a mobile food service. They understand the struggle. Day 3 of running my hot dog cart. It was a nightmare getting everything started, but if you can make it through all the paperwork, regulations, and general BS you will have to deal with, it is so worth it in the end. You will deal with problems you never knew you would have to deal with, but once you are up and running you will have so much fun.

Basically a place around with a professional kitchen that will allow you to use it to clean, prep and possibly store your food. Restaurants, churches, local VFW, stuff like that.
