So, you've got yourself a pressure canner and it's time to preserve some food! Great! But...you've never done this before, or maybe it's just been a long time. Perhaps you've never used this particular style of pressure canner...

Help! What if the pressure gauge doesn't go all the way down? Mine is stuck at 3 pounds, and I've never used it before? Yes, I did get it wet, by washing it with a wet rag. I didn't submerge it in water completely... Is it completely ruined? Do I need another? Or once it dries back out, it'll be fine? Can I dry out manually? Help?

Hey there! Getting it wet shouldn't be an issue. If it's brand new, you should call the manufacturer and let them know. It may be defective from the factory. If it's not new (used, or sitting in a cabinet for a long time), I'd take it to your county Cooperative Extension office. Almost all of them will test gauges for free.

Thank you I have never canned with a gauge and needed some insight. I love your since of humor starting with the labeling of the coffee cup and ending with" your eyeballs will thank you" . You are now my go to source for information FYI I have been canning as a self taught canner for about 7 years and I can every kind of meat (approved) vegetables, soups and jellies along with pickles.

This was very helpful. I have been canning for years (water bath) but made some homemade beef broth and want to do chili and stews in case we loose power over the winter. I treated myself and purchased a Barton Pressure canner and it is working fabulously. Thank you for clarifying some of my questions. Happy Canning! Joan

I'm using a "gauge" canner for the first time. I always used just a jiggler canner, but I am now canning some meat and wanted a gauge. I was under the assumption that the pressure had to rise UNTIL the pressure regulator jiggled also. Therefore, my first batch of meat overcooked and about a 5th of the liquid seeped out because my pressure was TOO HIGH. 14lbs of pressure when it was suppose to be 11, (but the pressure regulator jiggled at 14). Oh well, lesson learned. Thank you for such a good video. PLUS, you made me laugh too. 😅

We have not used the Induction canner ourselves, but they are specifically designed for induction stovetops (which often have a glass top). The problem with MOST pressure canners on induction burners is that the burners self-regulate so that they do not get too hot and crack. But when the burner turns itself off and on, you lose control of maintaining the correct heat/pressure in your canner. Again, we haven't used the induction canner, but it is supposed to somehow help avoid that if you have an induction stovetop. Another solution, if you do have an induction stovetop, is to purchase a plug-in canning element. Here are some thoughts on that: www.healthycanning.com/canning-on-hot-plates-or-portable-burners/

I just recently built up the courage to start pressure canning but was confused when the pressure regulator I have was not weight-compatible. This is the only video I have found on how to regulate pressure without a weight so far. I didn't know when I got my canner that there were some that you could use a weight with and some that you have to just close the vent and change the temperature to get the pressure right. This has helped me so much! Thank you!!!

Thanks for the video. First time using a canner. I read that manual so many times and couldn't figure out how to work it. I even had to get on line to find out what my pressure was supposed to be at. Seriously this helped a lot. I thought my gauge was broken until I watched this.

Good on you for trying it out! Are you using a canner just like this one? What did you can? Keep in mind that the canner manual won't specify the pounds per square inch (PSI), because each food has different needs. The most common are 10 PSI and 15 PSI, but you'll also see recipes that call for 12 PSI and others. Happy Canning!

Thanks for the reply. Now I have a question. Yes, I did use the exact same one. My question now is: I canned spaghetti sauce(used a lot of tomatoes) with hamburger and pork sausage in it. I canned it at 11-12 psi(couldn't keep the flames consistent) for 90 minutes, with the only weight that came with it. Do I need to re-do it for longer at a higher psi? I never realized that using a canner would be so difficult to understand. I've water bathed tomatoes for years, but this is seems much more complicated. So thanks for the video and help!!!!

Yes, pressure canning is more particular, and takes longer, than most waterbath canning. It's important to follow tested recipes from places like: nchfp.uga.edu/how/can_home.html and www.freshpreserving.com/recipes/ Those are two of the most trusted tested sites.

Also, remember that there will often be TWO sets of canning times. One for dial-gauge canners (like the one in the video) and one for weighted-gauge canners. Here's a tested Sauce With Meat from the USDA, which calls for 70 minutes at 11PSI (quarts): nchfp.uga.edu/how/can_03/spaghetti_sauce_meat.html Should you re-can them? We can't advise on that, without knowing exactly what you did, and don't recommend inventing your own recipes for pressure canning. However, if you DO make your own recipe, always look up the ingredient in your mix that takes the LONGEST and HIGHEST pressure canning. Never can it for LESS than that ingredient's needs: nchfp.uga.edu/how/can_03/spaghetti_sauce_meat.html

Very helpful! My over pressure plug blew out of my presto canner at high pressure, after about 15 minutes of reaching 11/12 psi. I turned the heat completely off and waited to take the jars out! I put my hamburger meat in the frig and next day put it in the freezer. Thinking I may need to return the canner or have it repaired. Then decided to try it again with canning dried potatoes. I put the plug in the hole and started the process of canning. Some stream came out of the hole where the over pressure plug was. My pressure never built up to over 5 psi. The steam was escaping to fast. What should I do? (Yours obviously is holding the pressure). Thank you!

So glad to find this video. I am new to canning and my new canner has a gage like this. I read through the manual and I knew it had to stay at the desired pressure,but I am having the hardest time keeping it from going up.Most of my recipes call for 10 or 11 lbs of pressure but mine runs between 10 and 13 lbs. I hope that is ok.

+Sherry Wilson Just make sure you take the gauge in to a Cooperative Extension office to get calibrated, once a year or so. As long as your actual pressure is ABOVE the required amount, you're fine. Just don't let it dip below the necessary number.

For those recipes in the Presto dial gauge manual calling for 6 psi, would we use the 5 psi weight with the weighted gauge? It makes sense we would, but I want to be absolutely sure. I'm at 741 feet above seal level.

Was scared to death to use this thing. I will say using electric stove I never could get it to hold a steady 10lb if pressure. I gave up and settled for the 12lbs.. at least it wasn't under 10.still waiting to see if the extra 2lb messed up the potatoes. Thanks for sharing this

I have a Presto. My gauge is not moving at all. The "doohickey" as he called it, is not popping up either, although there is water bubbling up around it. Any suggestions as to what I am doing wrong? Or, is something wrong with the canner?

Online it says 11 for dial and 15 for weighted … why would the dial have to be 15 if the weight is 15 ? Shouldn’t online charts say dial 15 and weight 15?

I have had that exact same pressure canner for over 15 months and have been terrified to can I thought today is the day. The gauge didn't move but this was before I put on the weight, then water was steaming out of that thing that pops up and I thought that was a bad thing. why has nobody on this planet made such a simple video like this one?? I had already given up and turned off my burners until I found this video. I turned it back on and now waiting for the steam to blow so I can start the ten-minute timer. I pray it works. gonna watch a movie on my phone in the kitchen. lol, canning some roast beef and pinto beans. ya, I should have started with freaking water ugggg. thanks again. this is a 7-year-old video I subscribed to ya I hope you have more videos!

Thanks. The problem I had, nobody mentions is, the round lid lock was loose and I didn't realize it till steam was coming out the whole time I canned. Now I know, because of that, to always check and make sure it is screwed down tight.

Which brand you recommend? Barton or presto? Since I don't live in the us, I'm not sure which is better, also I'm not sure I'll be able to test the gauge regularly, so not sure if I should buy one with a weight that regulate the pressure

I just purchased a new canner and wish to find that happy 10 on my gauge and was wondering if I could do a test run with nothing but some water in the bottom of my canner? I’ve heard that the liquid will overflow out of the jars if you allow the pressure to stay over the proper amount for any particular product and wish to avoid loosing anything. So would said method work in order to help me establish the proper temperature on my stove before actually putting the jars of food in the canner? I plan to start by canning a broth that I just made and have a concern of loosing some of it.

I have a presto canner but I only have the 15 pound regulator that came with it and I cant find a 5 or 10 pound regulator that is compatible with my canner, Is it ok to use the 15 pound regulator even tho i'm at 50 feet sea level.

Very good ! One word of caution. Propane burns a lot hotter than natural gas. If you use a large burner and want to can at 15 psi, you can warp the bottom (I did).

This was so well done! I had done a trial run for the first time today by pressure canning water. Then I saw this as I was starting to can some chicken broth, and realized that I had attached my gauge incorrectly. So I quickly turned off the canner, cooled it and fixed my gauge. Just finishing up my broth now and it feels so good to have tried it after having my canner for almost a year. Thanks for such an informative video.

How did you know the gauge was installed incorrect? My gauge has not moved even after the stem nozzle rises up out of the pan and l place the weight over the vent.

Will these steps work for a Co-op Model A brand pressure canner? I've got the book and all the parts to it including a new seal that's never been used and still in the original package. Even the pressure gauge looks nearly brand new.

My pressure dial gauge does not move. It’s a new canner and I have tried twice with pressure canning since putting everything together. The steam nozzle rises up and I put the weight over the vent and wait a while but the dial gauge for the pounds per pressure never rises. Not sure what I am doing wrong..

Do you have any idea why my dial gauge is not working? I just did my first canning session and everything was fine except my dial gauge did not move at all, so I have no idea what the psi got to :/

I'm so confused because my dial Guage pressure canner is telling me to put the regulator on when starting it up which makes no sense because how am I suppose to know there is a steady stream coming out of it if the regulator is already on.

There's always a risk! Usually from jars with flaws (scratches, chips, etc.), but everyone has a jar break periodically. It's a bummer to lose food, and to clean up the mess on the other jars after they've cooled, but it's not that common. If you have jars break frequently, you may be sealing them too hard, or are maybe using a set of older jars with scratches (for example, if you used a butter knife to get jam out of a pint jar last year, you may have accidentally scratched the inside, creating a weak spot).

An aluminum canner will not work on an induction cook top. An induction cook top would require a steel canner or an aluminum one with a steel insert in the bottom.
