Today, we're showing you how to make Sikhye (Korean Sweet Rice Punch, 식혜) from scratch! This is the traditional way to make it - and its sooo good! I learned the technique from my grandmother and now I share with you - our Neighbors! This drink is typically enjoyed after meals - as a dessert!

one of my professors brought us sikhye and fried chicken in college for our finals and he was my favorite professor for sure 😂 so delicious!

The first time my family and I had this at a restaurant, my dad told the waiter (in a good way) that it tastes like the leftover milk at the bottom of a finished bowl of cereal. The waiter was dumbfounded and looked like he'd just been told the answer to the universe, lmao, he'd never thought of sikhye like that before.

Awwwww sikhye is so good, it has a sweet flavor so it's a good choice to have it with less sweet things! Or it is good to have it as dessert with rice cakes ! It would be perfect!

Daniel! You didn't say this was so addictive! I made a batch on Sunday, today is Tuesday and if the approx 3L I ended up with, it's almost gone, and it's just ME drinking it! Lol! (It's sooo good chilled to a slush!) Time for another batch!

I followed your recipe (using a crockpot) and it is beautiful and tasty! Thank you for teaching me. This was one of my favorite things from Korea, but I hate the canned ones. Being able to make it now is awesome!

Ahh, now I know what's it called and how it's made. I had this everytime at Korean restaurants in Asia but in California, they don't serve it - it seems like a lot of trouble to make it though... So making this this weekend!!! Update… made this last night and just now tried it and wow! Super yummy, now I can enjoy Sikhye at home. ☺️ Cz my local Korean restaurant stopped serving Sikhye for some reason ☹️

I'm finally making Sikhye...you made it so easy to follow, to get every drop of barley milk, I used cheese cloth. Right now it's in my slow cooker so I can't wait to try it ...sigh...but have to wait over 8hrs

I work on NYC and I usually go to 32nd street to eat Korean food and also to the Korean market. I’ve been always served with sikhe and I tried it but I never eat it. From now on, I’ll eat it out of respect for the hard work. ☺️🥰

I have a Thermomix and there is a fermentation mode in it. Can I do that instead of keeping it warm in the rice cooker for it to ferment?

Yes! There is a one by Paldo that comes in a small yellow can - I like to get it from time to time at the convenience marts here in Korea.

Last week I went to a Korean Restraunt near Atlanta Georgia and after my meal they gave me a bowl of this. It had bits of rice floating around but the liquid was whiter in color. Served very chilled. Delicious! Have you ever made Makeolli, korean rice beer? I’ve tried several times and it came out okay. The yeast I used was called nuruk.

Yes, thats right! Nuruk - I tried once to Makgeolli but the flavor came out "interesting"... didn't try again... but its a nice project to master!

Have not tasted sikhye before, but it does vaguely look similarly to another drink called barley water. I wonder if the two taste similar as well?

Rice punch is sweet drink - no alcohol, kids friendly. Makgeoli is alcohol - only for the grown ups lol.

I love this drink! Need to be careful though. One 200mL cup of shikye is approx 200 calories so it's a calorie dense beverage. The same amount of soft drink is approx 100 calories in comparison. It's so tasty though. Eeeaahhhh.

Cheese cloth separates too easily and the malt fibers would escape, although a nut milk bag or another fine fiber bag would work, preferably one that doesn't absorb as much liquid.

I've wanted to make this ever since l saw my first Kdrama, Sunny Again Tomorrow! Labour intensive but l bet it's worth it. It's even worth the mid roll ads that cut you off in the middle of a word.

no it is not. sikhye is just a sweet drink. makgeoli (rice wine) is alcoholic fermented.

is sikhye intoxicating? I mean, can it make you tipsy or drunk? Coz I'm a muslim and I really want to drink sikhye. But there are lots of article on internet said that sikhye is a liquor.

no it is not. it’s just a sweet drink. i am korean and have had many cups of sikhye in a sitting so you can trust me. makgeoli (rice wine) is intoxicating, but not this.
