This video doesn't even need the slowing down as it is a real time painting. Most tutorials are showing a sped up version of the drawing or painting process, and this had a huge effect on me for years: I've been drawing and painting at the speed of the videos, extremely fast, and the results were horrible accordingly. Somehow I had the impression that masterpieces were created in 15 minutes. When I heard an artist say something like "This took me 4 hours to paint" for the first time, my mind was blown and I finally started understanding. I wish all artists would make clear how long it took them to create the paintings in their tutorials, and also tell people to slow down the video to see how to paint in real time.
I'm so glad I'm not the only one who does/did that. My brain doesn't want to accept that people don't paint as fast as most of the videos show and I feel I'm constantly fighting myself. It's so frustrating and, as you say, the results are horrible.

If you use a laptop computer to watch You Tubes, you can add on an extension with customizable speed settings, which is much better. I don't know how to achieve this on phones and tablets, though. On those i am still limited to the presets on the settings wheel, as you showed
Absolutely. If you find your painting drying too quickly, you may find going to a smaller size will give you more time or spraying with a spritzer bottle from a distance to rewet the paint.
