Smoking a chuck roast on the grill is such an easy, relaxing cook. I make these short, music-only bbq videos occasionally to capture the serenity and peace I get from cooking outside on my grills. It's meant to create a vibe that lets you to sit back with your favorite beverage and just relax for a couple of minutes. I’m experimenting with it Molly. I’ve had a few go over 1000 views. Some sis mess but overall the tend to do better than the narrated versions. But I have lots of people who like the narrated versions for several reasons. So I’m trying to figure out the best way to do both.

@@RonOnTheGrill My smoker did me dirty and stopped working the morning I decided to smoke up a 4lb chuck roast. I winged it based off this video by searing it and going the oven route, still came out great! Thanks again for the vid.

So, you pulled that at 210ish internal and it sliced nicely. How high would you take it for "pulled beef"? Cool video, btw. Thanks.

Hey Charlie! 210 is more than enough internal. In fact I didn't mean to go that high. It'll pull 205 or so most times, but every chuck is different of course. One important change to make if you know you're going to do pulled beef is to add some liquid in the last stage. The easiest way to do it is to place it in a pan, put a little beef broth in there and cover the pan tightly with foil. That will introduce some steam into the process that will break it down further so it pulls nicely. Different people do that part different ways. Some people put it back on the smoker, while some people put it in the oven at like 180 and just let it simmer till it pulls easily. It's important to add some broth if you want to pull it though, because Chucks can start to dry out on you otherwise.

I used to smoke meat on a gas grill. They're really not designed to do anything at low temperatures, so you'll have a tough time getting one below 300. I had a 3 burner grill and I was able to make it happen by using only one burner set pretty low. It was weird though because the first burner on the left still wouldn't fall below 300 but if I used the burner on the opposite end I could get it below 300. I played around with different ways to get smoke too. I found two ways worked best. First one was using a cast iron skillet placed directly on the burner underneath the grate, with a wood chunk or two placed inside. The best method though, was to use wood pellets and a smoke tube. You need a small torch to light pellets though, lighters aren't hot enough. Light one end, let it burn for a minute or so, then blow it out. It'll produce smoke for 2-3 hours. But most of the smoke escapes gas grills via that vent that runs along the back to keep them from overheating. You'll get some smoke flavor though, and you can get them tender. It just won't be quite the same.

Hey Ron, stop using those preformed briquettes. They have binders and all sorts of bs in them. It’s why your smoke was so white. It makes the meat bitter, too. Get you some lump charcoal.

The smoke was actually running pretty clean, despite what the shot looked like when I put it on. I wait till it's thin and blue. But regarding the lump, I've been thinking about it man. I thought it was mainly for hot and fast cooking though. Thanks for the tip.

You're obviously referring to the price per pound, and in that regard you're definitely right. The average price per pound of a Chuck Roast is about $7-8, while the average price per pound of Brisket is closer to $3. So to answer the question of whether or not the price is worth it you have to ask "for whom?" If you have a BBQ business it's definitely important to consider the price per pound, because that's how you're selling it. So you have to know the price per pound to know how much to charge to make a profit and cover your expenses. That is when price per pound becomes extremely important. You wouldn't even bother with Chuck Roast because they don't yield enough product, and the price per pound is so high you'd have to place a ridiculously high price per pound on your meat. The average person or family has no need to price either of these by the pound when they're trying to choose between a Brisket or a Chuck Roast. No matter which one they buy they'll make that choice based on two things; the price on the package and how much meat they actually need. At my house there's only myself and my wife. If were entertaining lots of people a Brisket makes sense. For just the two of us it doesn't. And that's the case for most families of 4 or less, unless they're entertaining lots of guests. The whole price-per-pound debate is absolutely useless unless you're someone selling meat for a profit. The average person cooking at home for their loved ones only cares about which one is more affordable, and that's dictated by the price on the package; not the price per pound.

@@RonOnTheGrill ya, I've watched a lot of the chuck roast video's, and many tout the chuck roast over brisket because of cost. that has led me perplexed because Chuck roast as well as most beef prices have gotten out of hand I'm in Hawaii, where chuck roast is about 12 dollars a pound, yet brisket is 3.00. my bother who was living in New Hampshire said hamburger is regularly priced at 1.99 per lb, yet here in Hawaii is 8.00. it leads me to believe store kake up whatever price they want and people will pay.

@@RonOnTheGrill hehe family are esters. I'll smoke a 20lb brisket and it's gone in 2 days. the way things are going is we are going to have to learn how to hunt again for sustenance. when hamburger is costing 8 dollars a pound you know that where we are headed.
