Blue Kangaroo. Great video. You're right. Beef ribs are the best bite in bbq. Better than brisket. They have a much richer flavor. I cook my ribs like a brisket. Low and slow at 225°. Takes about 8 or 9 hours to reach 175° to 180°. That fat is rendering and the bark is set by then. I rap my ribs in butcher paper. But, the fat I have cut off of brisket and beef ribs, I chop up small and put them in a pan and put them in the smoker to make smoked tallow. That is what I pour on my ribs when I wrap in butcher paper. I put them back in and cook them until they probe like butter. Which is 203° to 205°. I remove them and place them in a warmer oven at 150° for about 6 hours. Internal temp when I slice is at 150°. They are sooooo juicy and fall off the bone. Even with the membrane attached. Also, you can use aluminum foil on ribs and brisket. But use it as a foil boat. You won't lose your bark when you make a foil boat. Chud is the one who came up with this technique. And it works brilliantly. Love your videos. Keepem coming! LET'S GO! lol.

I’ve tried beef ribs a dozen times, I just never like them. To me they all taste like chuck roast on a stick. I’ve done just salt and pepper, seasoned the like pork, etc. just not a fan. I’ve got pork ribs down to a science and they are so much better.
Blue kangaroo to you also. I’ve done these beef ribs once and probably won’t do again. They were good but I can get a nice sized brisket for less money. Way to expensive.

I just don’t really ever leave a probe in for the whole cook and I like my instant read thermometer the best. I honestly haven’t used the Pit Boss ones so I can’t say whether they’re good or bad. I haven’t heard anything bad about them though
