Made these yesterday and followed instructions to the T......they turned our fabulous. I did use a homemade sauce, but other than that, followed your instructions including the brine. Wings were the best I have ever had and they fell off the bones! Thanks for your instructions Armadillo Pepper!

Today I have wings smoking in my MasterBuilt electric smoker. I brined them in salt water over night and made my own wing rubs just with salt, garlic powder, onion powder, smoked paprika, a bit of cayenne pepper, & cumin. But no sugar. Because I’ll be making my own honey bourbon barbecue sauce and it will already have sweetness in it.

This recipe was perfect. First time for me smoking wings. I think I brined them too long or I can cut back on the salt a little. I think if you left out the water all together you can get the crispyness without the oven. I’m so happy with them.

Tomorrow I’m smoking some wings which I’m brining over tonight. But what’s going to be different is that I’m going to pay them dry and going to make a spice rub for them. But before rubbing them I’m going to squeeze or press them down fry with paper towels and coat them in a bit of oil for the rub to stick. Another thing that will be different is that I’ll finish them on the grill skin side down to crisp them up after I smoke them.

Plus I’m smoking my wings and 250 degrees Fahrenheit for 2 hours. After that I’ll coat them in the sauce and smoker for a final 2 hours at 250 degrees.

@armadillopepper great videos sir. I just unpacked and set up my char broil electric smoker for the Superbowl. I am using this recipe for my whole wings and using your crispy skin using baking powder with a rub on wingettes. Cooking the same time...can you please recommend smoke temp and time to do both, thanks

250 to 275. Time will vary. Probably 1.5 hour +, but less than 2. You can temp check them to make sure they are done. Congrats on your new cooker!

I'm gonna smoke some to use as a seasoning for my spring greens. I'm just not gonna use a sauce. I will freeze them and use as needed. Using hickory chips.

I used my MB portable smoker for the first time tonight. Actually, the first time I have smoked anything. I brined the wings for about 6 hours. There seems to be a hot spot as, after 1 hour 50 minutes, a few in the back were black. I caught them just in time to be just edible. The rest are good. I used cherry wood chips. They were completely ash when I pulled the wings out. I added some more and have an eggplant in now. I'll definitely be doing more smoking. Delicious and pretty effortless! Thanks for your video.

I brined my wings last night, and also a half baby rack rib I saw in there freezer. If I was smoking with no sauce at all, I would want them crispy. But for BBQ wings, I want them soft. I do want a rub on it, so I'll try a few pieces to see what it does. Thanks for the video.

I followed this for my first time smoking outstanding i'm afraid to try this without brining I used stubb's spicy bbq sauce which is infused with habanero I used apple wood chips but now i'm out i'm looking forward to using the same recipe with cherrywood chips this time. For first time smokers use this recipe

Usually I use a fruit wood like apple or cherry with wings. Sometimes pecan.

Gonna try this tonight, thanks for the video. Also, Magic Eraser will clean that door glass like new, with little effort and "no" chemicals (cept whatever 'magic' is in the sponge).

I use a bucket of water and make sure sponge is soppy wet, then: scrub little (very light pressure, more like wiping), re-soak the sponge, repeat. It's kinda creepy how well it works.

Great video, thank you. I'm going to try it. The Big Chief smoker runs at a constant 165 degrees. That must mean longer cooking times and added risk of drying out? You mentioned that your Masterbuilt runs hot, which sounds problematic. What smoker would you recommend? Thanks!

I soaked mine in the brine overnight and smoked for almost 2 1/2 hours @ 225. The flavor was good but my skin was so tough, you almost had to peel it off to eat the meat. Did the 25 degrees make that difference or any ideas what I did wrong? Thanks, I'm a life long griller, just getting into smoking for the first time. Any tips are much appreciated. Love the videos.

Thanks for watching our videos. The lower temp shouldn't be an issue. Could have been just some old wings. Did you use an external temp gauge for the smoker? My Masterbuilt can run way higher than the temp on the display. Sounds like yours cooked faster than mine. Were your wings just the drumettes?

You only need a gold ball full of smoke pellets. Don’t over smoke or they will taste bitter. Cooking times vary for wings and wingers. BBQ sauce has sugar in it. It will burn. I would go 225 to 250 as far as temperature. Your cook times and temperature vary be the weight of meats.

These weren't too hot at all. I don't know if you can still get this sauce anymore. You can use the same recipe and just swap out the sauce. Similar here, I am the only one that likes hot. I make low to medium spice and then add a little hot sauce to mine. Happy holidays Doug!

It works well at the farmers market at the stands that sell the shelled pecans alot of ppl would ask for the shells they said it worked really well for smoking. I tried it once no problems just hard to find alot of shells they tend to burn up pretty quick.

Wood chips in the Masterbuilt. This is an old video, so I don't recall. I usually use fruit wood chips, maple or pecan with chicken.

I’m smoking some chicken wings again. I smoke mine for 4 hours total. Because for example if I smoke them for 3 hours they aren’t cooked all the way.

Why are my wings coming out rubbery? Masterbuilt electric. 275 is as high as it goes. Should the vents be wide open or closed? Does brining make them rubbery? I’ve almost given up. Any help would be greatly appreciated.

By rubbery do you mean the skin is not crispy? It is very difficult to get crispy skin when cooking at 275. You can dry brine instead of wet and you can also use some baking powder. Both of those techniques will help. We have a wing video on our channel using baking powder in the rub which does help. Another option is move to a higher temp cooker the last 15 minutes.

My master built smoker has a drip pan in the bottom of it, but it looks like it can be moved, should I move that under what I’m cooking when smoking? It has a hole in the rear and there is a hole in the bottom rear of the smoker that leads to a drip pan. The manual says nothing about moving it.

The drip pan in the bottom should pretty much take up all the space down there. It has a hole which lines up with a hole in the smoker. The drippings hit the pan, run down into the hole which then drains into a removable tray from the outside, so you can drain it. You should also have a water pan that slides in on the bottom rack. I don't put water in mine, but it also does a good job of catching drippings before they ever get to the drip pan.

@@Armadillopepper So the removable tray at the bottom for the drippings should not be removed and should be left in place, thats what i was looking for. i did ribs tonight, failed to get the membrane off and it turned out too tough... trial by smoker i suppose lol i have my wings for tomorrow though brining.

The brine recipe is listed at the 54 second mark in the video. My standard brine is 1 gallon water, 1 cup Kosher salt and 1/2 cup brown sugar. You can reduce the amounts proportionally for a smaller amount of chicken. In this video I used 1/2 gallon of water, 1/2 cup Kosher salt and increased the brown sugar to 1/2 cup, (typically, I would use 1/3 cup brown sugar for this amount of water).

It will depend on temperature and your smoker. The amount of wings shouldn't matter much. If your smoker is over 240, then probably around 1 to 1.5 hours. If you are smoking at a lower temperature then it should take a couple of hours or so.

Agreed, I don't use watee anymore either. After about 20 or so cooks learned the water is. It helpful (old video).

Does the brining prevent the skin from getting leathery???

The wet brining helps keep the chicken meat juicy. Not much impact on the skin. Some forms of dry brining will help crisp the skin up especially when using baking powder in the brine. We have videos on our channel showing dry brining.
