How to Steam in a Wok (with or without a steamer basket) | Sichuan School Ep. 11

Weeknight Steamed Salmon:
1 Frozen Salmon Filet (Fresh works too)
1 Clove garlic, sliced
1 Scallion, sliced
1/2 inch piece ginger, sliced (about the size of a clove of garlic)
2 tbsp shaoxing wine (10ml)
1 tsp sesame oil (5ml)
Salt to taste
Place salmon filet in a heat safe bowl, pouring on the shoaxing wine.
Next pour on sesame oil, followed by a pinch of salt, and place sliced aromatics on top.
Steam until cooked through, about 10 minutes if frozen or 6 if fresh (depending on size of filet)
Serve with microwaved leftover rice & steamed broccoli dressed with sesame oil and salt to taste.

Thanks for this video. I moved into a home that isn't set up for gas cooking so my wok was useless on the stovetop. But, I purchased a wonderful induction wok set-up. The kit included a steamer basket but I've never used one before. Trying to cook rice on the stove is hit or miss. The heat cycles on and off and I've either got scorched rice or undercooked rice. Instant pot is also a lousy compared to a nice, controllable flame. Suggestions on how to steam rice? Maybe some cheesecloth to keep the grains of rice from falling through? I think a plate might block too much of the steam. Time guidelines for steaming Jasmine rice?

c c k, 10 years ago i bought an electric steamer and it's the best $25 i ever spent. a good friend of mine is married to a korean woman and he has recently introduced me to the bamboo steamer. which is on my list for mrs. claus to bring to me while santa is busy busy busy christmas eve. Pailin from Hot Thai Kitchen has a great clip on the use of the bamboo steamer(s).

I'm not a fan of using the wok as steamer because it evaporates quickly and you need to keep adding hot water. I prefer using a pot and placing the bamboo steamer on top, so there's no way of running out of water while you are steaming food.

Can I use baking paper instead of parchment paper? Or are those the same thing?

As long as it is heat resistant it should be fine! You don't want to use wax paper because the wax will melt.

No, but do whatever you want. You will do it anyway, but be aware, there are RULES to this type of thing.

Not in my experience! But I don't think people should sweat about the seasoning of their woks all that much in general since they're often used to cook acidic ingredients and braise.
