How to STOP beef stew being dry! Make this Beef stew & dumplings

Every wondered how to stop beef stew being dry? You know of what I speak. That mysterious mind f**k when you've had beef braising in liquid for hours on end, and yet when it comes to eating...the beef is tender...but drier than the sahara! You'd think the beef braised in all that liquid would keep it moist right? WRONG. In this video i'm going to go through the reasons why, and show you how to stop beef stew going dry.
A good beef stew is one of this nations delights. Honestly, like I had said many times before, British food is good stuff, you just have to either find the right places to eat, or learn how to make the dishes yourself. Beef stew with cheddar dumplings is perfect for those days when it's so cold you can feel your soul leave your body! Follow my steps and you will have a soul retrieving godly, beefy stew of epic proportions!
To make my beef stew with cheddar dumplings you will need:
Serves 4 adults
►1kg of beef shin (whole cuts)
►4 medium carrots cut into big chunks
►1 large onion cut into chunks
►About 250g of swede cut into big chunks (Rutabaga)
►300ml of stout
►1 litre of good beef stock
►2 garlic cloves sliced
►2 bay leaves
►About 5 sprigs of fresh thyme
►About 1/2 tbsp of marmite
►Salt & pepper
►Oil for frying
For the cheddar dumplings
►250g of self raising flour
►150g of shredded beef suet
►125g of grated mature cheddar
►About 200ml of cold water
►Salt

You looked nice before the haircut and after! I do like and use marmite. That stew turned out so gorgeous! We have a lot of British food items here in the states but no Atora suet 😪. Eventually I’m sure. Thanks for sharing your recipe for beef stew and have a great Sunday.

thank you sweetheart! xx. is marmite pretty easy to get then? that's cool! If you can't get atora suet. Ask you butcher, because all it is is chopped fat from around the kidneys, so should be able to make some up for you no probs. Have a great day hun xxx

@@Adam_Garratt yes, we have marmite at a local grocery store called Meijer. Also at Meijer I can get fresh suet around the holidays. I usually clean it or the sinewy pieces, freeze and grate it. It would be nice to get the Atora here though. In time I’m sure. Thank you and wishing you the best during the lockdown. Made this very recipe for dinner this evening. Bought the shin of beef 🥩 from a very good local butcher. The choice of the beef makes all the difference, and thank you Adam for your advice on this. The meat was moist and tender and the Cheddar dumplings were superb. Thank you.

Looks delicious Adam as usual. I could just eat that for my tea but can’t be bothered to make it lol. I agree with you that the right beef is important and shin of beef is delicious. I made a beef casserole 2 weeks ago and used Theakstons Old Peculiar for the beer. It had a wonderful flavour and I’d recommend it. Thanks for the recipe Adam, and the hair looks very sexy xxxx

Absolutely Kimberly. I'd brown off the meat first, add everything to the slow cooker and add stock. Cook for about 6-8 hours. At the end if its not thick enough, add some corn flour mixed with water. I'd add the dumplings for about the last 45 mins. 😊

Errrr..... Mr. Garrratt; shredded beef suet (like Atora) can be used BUT: Ironically; ORGANIC beef suet is only about 15 % more expensive and with the amount you're eating, just a few more pennies for a dinner party (Maybe invite 3 friends?) IDK.....

This is such an important and educational video. I hope people really take in every bit of advice you are given here. Adam KNOWS what he's talking about, folks, and he really wants you to achieve the best results you really can!! And it actually saves you money following his advice because the cheaper cuts are the better ones to use. You just need to get them from the right place and not in a plastic tub that doesn't tell you what it actually contains and how long it has taken to arrive at your supermarket. Many years ago I went on holiday to Cornwall and it was self catering. It was spring and pretty chilly at times, so I popped to a wonderful butcher in Polperro and said I wanted to cook a beef stew for our dinner that evening. He immediately said shin beef and a bit of braising steak. You need the flavour and the texture they both give after long slow gentle cooking and you'll thank me! It was the most amazing beef stew and dumplings I had ever made up until then. It changed my life forever after for making beef stew lol It is SO worth getting the RIGHT cuts and the RIGHT bits to go with them, and then doing the RIGHT cooking process. Sounds seriously complicated, but it isn't at all. It is actually so simple. Simply doing it RIGHT does matter, though, if you want the results you dream of xxx

Hi Adam. I'm sure you've got a hidden camera somewhere in my house. I went to my local butcher on Friday and bought a big piece of brisket, so I'll be trying beef stew this week. Great recipe as always, well done. p. s. Good haircut too!!!

Morning Adam! Great vid - thanks for the recipe. Love dumpings though my waist hates them. Great haircut - I did a buzz cut this past week cause I as sick of not being able to hit the barber for 6 months and I could do this at home. Never had marmite - what is it like? You could also put the stew into a casserole dish and top it with a nice cornbread batter and bake that off too for a tasty southwest stew. Anyway - til next time - great day to ya!

I did the same during last lockdown. we are just about to go into another month long lockdown so got my hair done just in time! Marmite is a very strong, savoury salty paste. We spread it thinly on hot buttered toast. Most people that try it for the first time use way too much. a little goes a long way

Adam, I've never, ever, in my life heard of adding cheese into dumplings.. As a Mancunian, we love cheese, just not sure it belongs in a dumpling lol.. Might try it though😁.

@Adam Garratt: I tried Beef Shin only once, bought it from my local supermarket here in Oz, and it was just as you described, dry as f**k, pieces too small, and I'll never use it again. 😡 Since that time, I only make beef stews with whole chuck or whole brisket, which I buy from my local butcher, and slice it up as *_I_* see fit when I get it home. I've never made stew with beer or stout, (mostly preferring red wine), but one of these days, I'll try it. Here in Oz, probably the easiest stout to buy is Guinness, so I'll probably try that. I've never made dumplings before either, but that's mainly because until recently, here in Australia, we could only buy Beef Suet on special order from a butcher, or from one of those hideously expensive "artisan" butcheries, (don't forget to add hideously expensive shipping costs, too, because they are mostly a long, long way from Sydney). Until quite recently, the only suet we could buy in supermarkets was *Atora Vegetable Suet,* as Beef Suet was, [and still is], a prohibited import to Australia, I guess because of BSE. Fortunately, there is now an Australian manufacturer of Beef Suet for the mass market, supplying all the major supermarket chains, quite reasonably priced, too, so I might give the Cheddar Dumplings a try, one of these days. 👍🏻 BTW, as a long-time devotee of *_Rumpole of the Bailey,_* I must confess to a long-standing infatuation with *Steak & Kidney Pudding,* but until now, I have never been able to obtain its most important ingredient: *BEEF SUET!* 😭

Shin beef is a tender great meat for stew,but I have never seen it sold in diced pieces.It is usually sold in thick medallion like pieces which you cut up yourself.

Your comment on the cuts of beef for stew are spot on. Supermarket 'stewing beef' is awful: different cuts that take different lengths of time to cook, so stew is yuk and dry. The cheddar dumplings look amazing. As you say cooking is not rocket science, follow a few simple rules and hey presto. The umami stuff is the icing on the cake so to speak. I use, marmite, Worcester sauce, soy sauce and energy oyster sauce for umaminess. Cheers Adam a great recipe and a great channel.

Crisco would work just fine yes. Make sure it's super cold before incorporating

For sure. I don't think there's many cheap cuts left now. Look at the price of ox tail now, and it used to be thrown away.

Hey, Adam!! Love cheddar biscuits! Never thought to put em in stew but what a good idea! You're so smart, you!! Question though - What is marmite?? Is there an alternative? I don't think I've ever seen it in stores.

Cheryl my darling, marmite is basically a meaty, salty, savoury intense paste. It's very strong. We usually spread a small amount on buttered toast, and it's a delight to behold. But nothing else compares to it. 😉😘

The best advice Adam gives about selecting your beef: supermarket stewing beef is aweful, too small, all different cuts of meat that cook at different lengths of time. Shin, i Find is the best.Your stew wont go wrong if you use this and use Adams recipe.: awesome!

Going to make this today Adam. My wife told me we had some frozen Iceland stewing steak in.....NNNNOOOO! I said (hope you are proud of me 😀) So, off I pop to Morrisons... couldn’t for the life of me find bay leaves so asked for directions...... She sent me to the Baileys!!! bloody face masks. Anyhow wish me luck....

Hi, thank you for the video and nice haircut. It has been 2 years since I moved to England from Istanbul and eating dumplings in stew is still strange for me. I will use your recipe for the next meat dish. Definitely a perfect advice [ keep away from supermarket meat] butchers may be a bit expensive but dry meat is not acceptable. Thanks again

That's really interesting to hear. Yes, mainly the dumplings were a way to make the stew stretch. They were to bulk it out. These days they are an integral part of stews and casseroles (not all the time though). And made properly are light and fluffy with a nice crisp top. Thank you for watching my friend. Adam my dear I want to cook this in my slow cooker as I don't have an oven proof casserole dish. How long would you reckon? X

I reckon a good 6-8 hours on high. Or maybe 10-12 on low overnight. You might find it doesn't thicken so much in the slow cooker, so what you can do is before serving, make a slurry with some corn flour and water and stir that in until its the thickness you want. Xx

Hard to describe. It's a very meaty, savoury salty paste. We put it on buttered toast. But when you try it, use very little. I see so many Americans on RU-vid use way too much and wonder why they don't like it 😂

@@Adam_Garratt Adam I finally got my hair cut too sunshine. Things here are looking up at least where I am. Kids had a successful trick or treat last night. The people were being kind and respectful, and the parents were lovely and enjoying a good walk with the children in what was a lovely cool night. We will see very soon what our future will hold for the next 4 years. Don’t worry too much about here, I’m more scared for you and the rest of the uk. This madness has got to stop. We all need a happy heart and something to be glad about.

I struggled with it for years, so don't worry. Didn't matter what I did, always came out dry. It was an old Marco pierre white video that suddenly made me think 'ahhhh I know what it is now!' never looked back since.
