Where have you been young lady?! Had to restart brewing. I ruined mine with light conatamination. Started over w a bottle of GT's original. Can't WAIT to be actively brewing batches again! I realized quickly......i don't like ANY sodas but a nice fizzy kombucha is divine. Customizeable in only a billion different ways.

@@KombuchaLiz it's almost ready! Have a question....what are your thoughts on high alcohol kombucha? I don't want to get the fancy equipment to see how much alcohol is in it but I do wonder how much is actually in it I assume you just take your Brew an add fruit or sugar along with champagne yeast although I will have to experiment with the amounts and how long it ferments would you say that it's safe to say just wait till it gets done bubbling and consuming the yeast??? I am finding very little useful information online

Hi Teeko..I really don't know. This has been something I've wanted to experiment with for a long time now..but just like you I don't want to invest in stuff I may only use once. Have you read this article? These guys have great information. I've learned many great things from them. "How To Increase Alcohol Content Of Kombucha Tea | Kombucha Home" kombuchahome.com/how-to-increase-alcohol-content-of-kombucha-tea/ In the article it mentions a starter kit from Amazon for $15. I guess thats not that much but the article is from 2015. Let me know what you think.

Thank you Liz. I bottled my very first batch two days ago with thawed frozen fruit (either strawberry or mango/blueberry). There’s NO way I can wait ten days for the second ferment! Maybe another day or two before going in the fridge, then I’m cracking one open! I’m also two days into my second batch, but I’ve ordered a 2.5 gal crock for constant brewing too. Hopefully that will allow me to keep up with my anticipation consumption rate...........and my family’s IF I can find a flavor they like.

Wonderful! 10 days is an extremely long time to wait for booch. It's ok to give in some time. Ay, good luck with the continuous brew.

I made lemon, grapefruit and sorrel kombucha all at the same time and waited about 4 days into the second fermentation stage to test the carbonation level. The sorrel was amazing but the lemon and grapefruit had zero carbonation. I’m going to do what you said to do and hopefully I’ll get better results. Thank you for sharing .

I live in Nevada, I have 3, 2 gallon jars of kombucha going at a time for family and friends…. I staged them so that there’s a jar ready to bottle every 2 or 3 days….my first ferment is ready in 4 to 7 days….And the second ferment is ready in 2 to 4 days Depending on how warm my apartment is sometime even quicker… I’m still using my GTS bottles and lids without a problem getting very fizzy kombucha after 2 yrs…I do do larger batches for the 2nd ferment in my 1/2 gallon ball canning jars with organic fruit juice… or other varieties like ginger, turmeric and lemon,,mango and ginger, Pomegranate juice, always add a little sugar which is needed to ferment and get very it very fizzy.. let that ferment for 3 or 4 days… longer if you don’t live in a hot zone like I do. Then I strain and put I into my GTS bottles. So good

Mine is on the second ferment of my second batch the first didn't fizz and I threw it out! Now on the first and second I added Knudsen fruit juice and still no fizz. I will wait longer to see if it fizz's, and my first scoby is thin and on the bottom. The second scoby is floating but thin also.

Hello. It's actually common to not have good fizz in the beginning. The scoby needs time to get acclimated to its new environment. I've never heard of that fruit but it sounds interesting. Where in the world are you? 😃

So do i leave or strain the watermelon pieces when its ready? I'm giving a bottle to a friend, however im not sure what what to do with the watermelon. I'm assuming it would be yucky in 10 days

10 days, I let my kombucha second fermentation go 3-4 days. It was fizzy in the begin I think I need new bottles
