Gaiwan all the way! So much flexibility for brewing, the ability to experience so much of the process, and a great way to hold the universe in your hand. 😉🍃💚🍃

Kaishan has a wonderful way to explain and I loved the little tip with stemming the flow with using your index finger. I will have to practice 😏

Kaishan was a wonderful guest. Her greatest skill is helping people learn about Chinese teas by breaking everything down into sizable bites. If you live in Melbourne you should attend her monthly classes!

Thank you for sharing this. How much tea do you use per gaiwan? Is the masterclass still available? I went to the link but it was void.

It depends on your tea. Basically 1/4 of the gaiwan for the tea

Whenever I use Gaiwan, its too hot to hold. I burn my fingers. Is it my technique? Or the quality of the Gaiwan? I purchased mine at a tea market in Guangzhou, but maybe I purchased a low quality one.

Don't fill it up so high. Keep the water level lower

I just bought a new gaiwan but it is really big so I am still using my old chipped one that has a metal filter. Does that mean it's not really a gaiwan?

I have never heard of a gaiwan with a metal filter. Big Gaiwans are harder to handle. I would suggest buying a smaller one and enjoying multiple infusions.

Why people using lid for smelling? Instead of pot?

Hi Tomas, The aroma is capture on the inside of the lid and you can smell it safely before or after you have poured. There is too much steam from the leaves when you first pour and when there is still water in it. Cheers Tania
