How to use butterfly pea flower 

I'm not 100% sure about this, but probably the pigment in the flowers is sensitive to pH and changes shape (and therefore absorbs light differently) when you add an acid

I developed a cocktail with butterfly pea tea for a party once. It had lemon juice, plum bitters, and cherry blossom infused vodka, and seltzer. I layered it for serving, so it would have this very dramatic swirling pink/blue line near the bottom. Once it was stirred, it had this pale electric lilac color. 10/10, would make again.

Anthocyanin present in the pea flower acts as a pH indicator. Lemon juice is naturally acidic. Once added, the equilibrium of Hydroniums ions shifts to the acidic range on the pH scale.

I drink this every morning and i use it in my salads

Butterfly pea flower has blue litmus And lemon has citric acid Which reacts with the blue litmus and turns It red Most of the time the blue and red mix together To make a beautiful purpul colour

it's either called Butterfly Pea flower or Asian Pigeonwings.

The colouring is sensitive to acidity to the point of changing colours. I’m not a scientist 😂
