ABOUT THIS VIDEO:
This is our longest video yet. We have time stamps if you'd like to skip the dispatch and get right to skinning 3:18 quartering 11:33 or packaging 16:03
I tried to be as detailed as possible and my son Brandon helped out zooming in and out for good close ups.
I hope this video helps someone out there. As always, thanks for watching.
Death throes & Shaking after dispatching:
*Please be aware that rabbits will thrash after the neck is broken- death throes.
Once the neck breaks, terminating all signals from the brain to the heart, lungs, and rest of the body. The shaking is the last remaining electrical nerves left firing after the dispatch. This may last for 20-30 seconds. The rabbit’s eyes may even be open but it's instantly dead. There's no electrical signals to tell the rabbit to shut its eyes.

You do a disservice cutting away from the killing part so soon as there is more they need to see after the neck breaks, like the body kicking for 20 or so seconds because they will think they did something wrong when it happens.

Bobby, thank you so much. we unexpectedly had to butcher one of our young bucks. he was gonna be one of our breeders but he got sniffles and would not get better. We were concerned he would infect our otherwise healthy small herd. I had never butchered an animal. While crying nonstop because we had gotten attached to the little guy, I played this video over and over and successfully processed him without contaminating the meat. I could not have done it without your video. I did not want to waste any of him. Thank you very much.

I just picked up my first meat rabbits yesterday! I have 6 ready to be harvested and 4 (3 does and a buck) I’ll be keeping for breeding. I’ve processed chickens before, but not rabbits. My Nonna recently found a cook book dated 1702 in her house. This house has always been in my family and passed down through generations. She’s Italian by the way my whole family is. And it has some of the tastiest rabbit recipes in there. We’ve tried them using chicken and compared to using rabbit the rabbit wins all the day. From what we’ve found out about our family is they grew everything they ate. All veg and fruit and all the meat and dairy and a family favourite was always rabbit! I’d love to sent you a copy of the tastiest recipes that we’ve tried. Not all of them are Italian recipes either. It sounds like on my Nonnas travels he would trade rabbit meat for spices from different regions and countries he visited.

Don't be alarmed by the death throes for 15-30 sec. It's just left over electricity in the body still firing. It'll expire in seconds. Their may be some bleeding from the nose and mouth. This is normal. Thanks for watching.

Exactly what i wanted to say. I'm going to process some roosters before getting to my rabbits. The breaking of the neck seems like a very good method to sacrifice the animal but i'm going to use a spring actioned bolt stunner, it will arrive in 2 weeks from Germany. It can be used on poultry also. Bobby , I've been watching a lot of videos of dispatching in preparation for my first one and your video is by far the best explained and filmed. Congratulations!

@@TheRabbitryCenter Update: After waiting on some "really reliable guys" to import the stun gun from "Germany" i finally received it after one month. Guess Aliexpress had difficulties sending shipments with the Corona... But i digress. I finally did the slaughtering of those two cockerels. Even with that FDick knockoff it went flawless. I modified the rod of the stun gun to be more pointy with an angle grinder (it was just cut on a 45" angle). I made a simple holding tool out of some pre welded wire fence panels, mounted it above eye level on a wooden fence, bended 3 out of the 5 prones so i can hook a sack on the exterior ones and the middle one to hold the legs that were tied with zip ties. For the first one i was a bit anxious cause i didn't know if my plan was made properly. I had a bit of movement from the chicken, getting its head inside the sack but i hold it by the neck put the stun gun at the base of the skull near the spine, chin on the wood and shot. The neck went limp instantly, the body started shaking, and flapping its wings but it was held by the sack. After 3 seconds i took a 10 inch Damascus slicing knife (yeah i know i'm extra) one single swipe from tip to base... Off with the head, proceded to bleed it. Then i cleaned the feathers the old fashioned way, rinse and repeat. Lovely little pterodactyls they were, I already made soup with homemade noodles and Coq au Vin out of them and they are so different from the comercial ones, for these dishes they were perfect. Now i received 15 chicks, 5 white broilers, 5 Rangers and 5 Kabir. 10 of them will be sacrificed at 12 weeks (all broilers, 4 Rangers and the biggest Kabir cockerel). It was a very emotional thing. Before I sacrificed the first 2, i took care of one little guy who I thought he was gonna die, when i left I literally said my goodbyes. When i came back I had the surprise of him being alive, i took care of him all night, syringe feeding him, boiling water and puting it in their box. Now he is fine and crazy happy, he is half of the other guys but i will keep this Ranger, I named him Chuck Norris. For my bunnies it will be even harder cause I already started to get attached to their parents and I haven't even seen the little fluffsters yet but I want to sacrifice a autumn lamb for Easter, I will buy it from a traditional shepherd up in the Carpathian mountains, so no emotional attachement but a way bigger and very gentle and cute animal. PS: i know most americans call it dispatching, but it sounds so strange and distant to me. They are not taxis, they are living animals. Harvest sounds a bit better but still...

@@orlandolzr wow that's some story. Your story remind's me of Paul Harvey's speech "So god made a farmer. " If you haven't heard it he's talking about farming and the beauty and miracles that it brings on a daily basis. It goes something like...""I need somebody strong enough to clear trees and heave bails, yet gentle enough to tame lambs and wean pigs, one who will stop his mower for an hour to splint the broken leg of a meadow lark. So god made a farmer. It sounds a lot better coming out of Paul Harvey.

I understand completely. We harvest chickens and deer and rabbits. Rabbits by far are the cutest. I promise you once you do it a few times it becomes just another chore. It's just getting past that cuteness is the tough part. Just remind yourself you're raising healthy meat for your family and it's the smart thing to do. I pet my rabbits and talk to them softly before dispatching and it calms them and helps me. I tell them we appreciate their sacrifice and it's time to move on. I walk them to the popper and make it a very quick process. Good luck.

@@TheRabbitryCenter That's a very good way of looking at it. Same with deer. I plan on raising chicken in the spring too. My family is trying to live off the land and raise our own meat. It's definitely healthier.

@@shelbyj833 it makes it easier if you have them all the same color like white meat rabbits and also don't name them because you will get attached to them after that. Just give them a number in your records. I joked with a cousin of mine that she could name her kids chickens names like BBQ, Satee, Roast, Stir-fry and other silly names to remind the kids they will be eating them.🤣🤣🤣

Please include death throes. Also, the ribcage makes a wonderful, nutritious, soup base, as do all the other parts you throw away. We raise rabbits to be resourceful, not normal.
@TheRabbitryCenter
@TheRabbitryCenter 5 лет назад
Absolutely. We've made homemade soup using it in the past. Its pretty good. The family isn't big on soup. Unfortunately it just sits in the fridge and eventually ends up out in the coop. But I agree its very good. Maybe I'll do a soup video in the future. Our rib cages go to our chickens along with kidneys heart
@TheRabbitryCenter
@TheRabbitryCenter 5 лет назад
Death Throes-It very's. After dispatch, the electricity that's still firing in the rabbits body can be short and subtle or a bit longer. There may be a bit of bleeding from the nose and mouth. I can tell you 10-30 seconds. I chose neck breaking over pellet gun and Hammer because I feel It allows me the least room for error. It's instantaneous and impossible to mess up if hung at knee level pulling the hind legs up. But I do know rabbit farmers that claim they've been using a hammer for years and never missed once. Why I didn't include Body shakes- Although it's educational it's a little off putting for some. We wanted to show our customers how easy it is to process a rabbit but still keep the video farm family friendly which isn't easy to do for new comers. I now wish I would've added some captions or a brief warning regarding the body kicks and shakes after dispatching so I apologize to everyone for that. I will make another video with more details. Please let me know if there's anything else you'd like covered and I'll be sure to include it. Thank you very much for you comments.

Also, is 12 weeks the best time to process for meat and fur? Thanks for all your videos, they are very informative and easy to follow!

Hanging the dispatch tool knee-high so you're able to just stand up and use your thigh muscles with firm grip- you're using your legs just as much as your arms . One movement using legs and arms and back simultaneously with conviction.

Very informative video... thanks for sharing, haven't seen any new videos lately??? back to re-watching older ones lol... When is the best time to remove kits from the mother and how old is best time to harvest them? Denis
@richardmang2558
@richardmang2558 3 года назад
Weening is done at 8 weeks. There are two different ways weening is carried out. 1) Remove the doe from the kits leaving the kits in their cage which they are used to. This puts less stress on the kits since they are accustomed to the cage and surroundings. They continue to grow quickly since they are not stressed. 2) Remove the male (since males can become aggressive. Boys will be boys.) kits at 8 weeks and then remove the female kits at 9 weeks. This allows the doe's milk production to taper off in stages in stead of all at once which happens if all kits are separated from the mother at the same time. Each way has its pros and cons. The following are bits taken from the book "The Backyard Homestead Guide to Raising Farm Animals" Edited by Gail Damerow. Fryer: harvested at 12 weeks or less. Since older bucks tend to taste, well bucky, they are best harvested at the fryer stage. The meat is tender, fine grained, and bright pearly pink, and can be cooked in the same ways as a chicken fryer. Roaster: older than the fryer, generally 4 to 6 months. The meat is firm, coarse grained, slightly darker in color, and less tender than a fryer, and the fat is of a creamier color and stronger flavor than a fryer. Cooking with liquids or oil helps keep the roaster moist and tender. Stewer: older than 6 months. The best cooking methods for a stewer are braising and stewing. Moist cooking is required to tenderize the meat of an older rabbit. I would add that all rabbit meat needs to age long enough to pass through rigor mortis. Otherwise it will be very tough with poor flavor. So a minimum of three days in the refrigerator before being cooked or frozen. An older rabbit that is tough, like an old buck, will benefit from longer aging up to 10 days, beyond 10 days the improvement continues but tapers off.
@richardmang2558
@richardmang2558 3 года назад
Also remove the "silver skin" from the meat. This allows the spices to penetrate into the meat better and lets the meat cook better. The silver skin is the same as the tough clear membrane on the inside of a slab of pork or beef ribs .

In my Grandpas day it was considered natural to process your dinner yourself. Today, it's considered normal to let massive corporations process our meat which comes at a price. That means more chemicals and additives for your family which none of us want. Today what's considered normal is a very unnatural way of eating meat. There's a very important reason for harvesting your own animals. Yes your rabbits made the ultimate sacrifice but you're also sacrificing your time and effort. Dispatching your animals is the quick and bad part of it but it's only a quick step in the whole process. Breed, Feed, Harvest, Freeze. I'm always impressed by someone willing to do it themselves. That takes more courage than to ask someone else to do it. Farmers love their livestock. I understand the gratitude you feel for your rabbits contribution to your family. No need to be confused by your harvesting. It was your sweat and grit that actually did it and bred, feed and raised these animals all the way to processing day. You gave your rabbits a good life until it came time to process. Even the dispatch was quick and humane and that's something rabbits don't get in the wild. You should be proud. Heck of a job. "it's never plain easy but it does get easier. "

Great video! Very thorough! I have only one question and thats about scent glands. Are there any of concern that need to be removed?
@TheRabbitryCenter
@TheRabbitryCenter 8 месяцев назад
That’s a great question. Scent glands are found on a rabbits, chin and very close to the genitals. Priority to processing, We’ll dunk the Rabbit to keep the fur from floating around. We remove the hide. The waxy substances will come off with the hide. The chin scent gland will come off when the head is removed. I score of the pelvic bone with my knife releasing pressure on the colon so I can remove it. At this point, The scent gland will be 100% removed leaving just the meat on the hind quarters. This is a simple method which makes for an easy and clean processing. I keep the hose with a spray wand available when the weathers right and I have a clean bucket of water just in case I need to dunk or clean the Rabbit at any point. The meat is always tasty. Best of luck!

@TheRabbitryCenter
@TheRabbitryCenter 2 года назад
Yes very cute. Maybe the cutest livestock animal ever. But when raised right, they're also abundant and incredibly nutritious and chemical free meat for your family. Try your best not to forget that you did a great job creating a healthy and comfortable environment for your animals. That's more than most mass producing operations that raise animals in bad conditions and pack there livestock meat with dyes, preservatives and chemicals. It's not natural. What we call normal is a far cry from healthy. What your doing is getting back to what's all natural and a truly healthy lifestyle. Filling your freezer with chemical free meat is what all meat eaters should do but some unfortunately don't possess the moxie. Your family is important and they deserve to have good food and if that means you have to get your hands dirty-you're willing to do that because your strong and they're worth it! Rest assured the processing does get easier because with time comes experience and you become more sure of yourself and you'll know in your heart that growing your own food is the absolute right way to live. Hope that helps. Best of luck and thanks for watching!

I understand. Its not for everybody and I've spoke with some rabbitries that just can't do it either and quickly end up overstocked in rabbits and selling them for 5-10$ which ends up costing the rabbitry money in the long run. Also, we don't harvest all are rabbits just when we need to. They're very cute which makes it even harder. The first harvest is tough and the second harvest is a little easier and so on. I do love my rabbits very much and I want them all to live a high quality life. I can compare this passion with White tailed deer. Another beautiful animal. I plant a food plot every year and work hard to make the deer comfortable on the property too. But in the end we harvest a couple deer every year. Most importantly, knowing that our Rabbits and Deer are harvested and processed in a clean and humane way means a lot. Its organic and one of the highest quality meats you can eat. Especially compared to the chicken and beef in the stores. If you have a Rabbitry, Its important to be able to harvest if your rabbitry calls for it(only my opinion). Its not the most pleasant thing to do but necessary to keep your animals and cages balanced as well as your pricing. The same goes with deer hunting if you shoot and harvest deer. You should learn how to prepare and cook the venison. Deer hunters that hunt and don't eat venison is a pet peeve of mine. Sorry for the long response. I wish you luck on your rabbitry. Harvest or No Harvest. ;)

Aging your rabbit would most definitely make things even tastier. I want a walk in cooler one day. Rabbits already are delicious when you process and cook the same day but I'd like to try a taste test with an aged rabbit. Years ago I put a steel closet rod in a spare fridge and would hang deer quarters using s-meat hooks. I'd lay about a dozen paper towels down to catch any blood. This worked great on Michigan's hot October days early in the deer season. You could age your rabbits the same way.
