The chef face look like Japanese or Korean but the kitchen is look exactly look like a Chinese restaurant supposed to look like (not that clean) but how on earth he speak Japanese, although he was in Japan but if a Chinese person they never speak other language than Chinese language. This is a little confusing. So look like he’s not Chinese after all. He is a Japanese open/run a Chinese restaurant since 1976. But the question is how come he’s NOT AS CLEAN AS most of the Japanese chefs/people was.
Japanese cooking of Chinese cuisine is the closest to local Chinese cuisine in the world, no matter in terms of practice, ingredients and techniques, etc.

The knowledge of what ingredients go where and how much to use to get the best flavor is phenomenal! It's like a science or something. They know their stuff inside and out and it's awesome to watch.

Imagine working like that everyday, beginning from we hours of morning till evening, as owner cum chef, I wonder when do they get to enjoy the wealth they earn. I think they should hire employees, and the owner can supervise..that's just my humble opinion 🙏
Kudos to the older man, the owner, for such amazing work ethic (he’s not that much older than me). I enjoyed watching this immensely, and perhaps it reminds me of my years working in restaurants as a young man (15-20 years old).
