If you are referring 2:26:31, that is Kani-Tami Don (also called Tenshinhan). The Amazu-an (甘酢あん) sauce is typically made with soy sauce, sugar, white vinegar, chicken broth and potato starch slurry. Depending on the regional style, Sake is sometimes substituted for the vinegar.

They are competent chef's that have all the required cooking skills. Incredible? Shaking a wok and flipping the food is not considered an olympic achievement. Pretty much every chef who prepares Chinese cuisine can do this.
