STEP BY STEP INSTRUCTIONS AND DETAILS PROVIDED IN THE VIDEO.

INGREDIENTS I USED:
***Baked in oven preheated to 350 degrees for 25 mins. (Baking time will depend on your oven)
3 C All Purpose Flour
2 C Sugar
1 1/2 Tsp Cinnamon
1 Tsp Baking Soda
1 Tsp Salt
3 Large Eggs [Room Temperature]
1 1/4 C Vegetable Oil
1 Tblsp Vanilla
LorAnn Pineapple Oil or 1 Tsp. Pineapple Extract
8 oz. Crushed Pineapple with Juice
4 Ripe Bananas
1 C Chopped Roasted Pecans [Use in cake & Icing]
**Cream Cheese Icing
1 Block Cream Cheese
1 Stick Butter
3 C Powdered Sugar
Pecans
Pineapple Juice
Vanilla Extract
Pecans

Donna, I came close to crying while watching this video, because it makes me think of my grandma. I live in Ohio. And I have lived in the North all of my life, but my mother's side of the family is from the South. My grandma on my mom's side of the family lived in South Carolina for most of her life. Anyway, the only time in my life that I ever had Hummingbird cake is when my grandma made it. She introduced me to Hummingbird cake. She passed on a few years ago, and this recipe just reminds me of her. Thank you so much for sharing this recipe. One day I am going to make this cake and I am going to remember all of the wonderful memories I have of my grandma.

Penelope, yes from North as well. Cleveland, OH, my dad's people are from the South. That's were I learned to cook and bake. My mom's people could no cook, thank GOD my mother married a southerner and learned to cook from them.

After my mother passed away 12 years ago, I've become the primary cook for our family dinners. Recently I came across 2 recipes on RU-vid that intrigued me. Hummingbird cake reminds me so much of my mom❤🙏🏽🕊. Definitely true about bakeries using box mixes. We were stunned at work one year when a coworker picked up a cake we’d ordered from our favorite bakery & she saw tons of empty cake mix boxes in their garbage 🤣🤣🤣.

The only thing I knew about hummingbird cake is that it is from the south and it has pineapple. I didn't know about the banana. So this is a kind of fruit cake? It is nice to finally understand what it is! This is an educational channel!
