I used this video to make these little noodles for the first time. Not having the funky pasta-making thingy, but inspired by its use here, I used a plastic colander with larger holes, and a dough scraper, to drip them into the water, and it worked _perfectly_. Very impressed! The chicken goulash/paprikash recipe and these noodles are now joining my repertoire. Thank you!
Hi Cheri - I had to smile when I saw you narrating from inside your car :) but the audio is great. I don't eyeball ingredients yet, but use 1 egg per 1 cup flour, a little salt and fresh ground nutmeg. Then I thin it as necessary with milk. Your batter seems a little loose to me but you work it fast enough to avoid it just running through the colander. Your video is short, sweet and to the point. Very well done. Thanks.

Thank you for these videos. If you have any more Hungarian recipes, please post them! I live far from my family and try to make recipes from family recipes from my grandma that have missing steps or kind of eyeball it notes. I call her or my aunt sometimes, but it's so much easier to watch. I need to get one of those contraptions. It would make making nokedli so much easier. I didn't know they existed. I can make chicken paprikash, kieflis, apple streudel, and palacsinta, but find myself guessing on other things.

I made these when I was married to my ex, so I had the benefit of being able to learn from his Mom in person in Hungary, and over the phone with her when we were in the States. Try tojásos nokedli, aka egg nokedli once. Just add four beaten eggs and nokedli and some salt i a pan and stir untill the eggs set. We eat it with simple letuce in some vinegary-sugary water. Yumm
if you add a couple of drops of oil to the boiling water, the water won't boil over. Another tip-use the pasta retrieval spoon with those holes if you don't have the red utensil and use something else to pick up the finished noodles.
Cheri - watched the video for the stew. Looks really, really, r e a l l y good. Your Nokedli recipe says 2 eggs to 4 cups flour but your video says 2 eggs and a bunch of flour (4-5 cups). I guess you're saying it's not critical, but Ava must know what the measurements are, or could measure them? My Hungarian friend said her Dad made the noodles with 1 cup flour to 1 egg ratio, a little salt, then add your water to thin it properly. I think this ratio gives the Nokedli a little more body and the recipe is easy to pass along - 1 to 1 eggs and flour. Spaetzle recipes are usually 2 eggs to 1 cup flour which helps hold together the longer noodles if using a press. I also like your sound proof video booth (your car) for the narration. thanks for sharing !
Thanks so much for the comment Vince Amato ! Unfortunately I don't have the exact measurements but yes, it is a very forgiving recipe. Your Hungarian friend's Dad is right...and my ex's Mom's recipe was very similar. 1 egg, 1 cup flour would work just fine, and then just add salt and then milk gradually. You do this so there are no lumps and it comes out perfect every time! It's hard to mess up! :D Good luck.
Yes, after cooking the Nokedli, in a large fry pan, Oil , caraway seeds 1/2 t, chopped cabbage, salt & pepper. after the cabbage wilts, add the Nokedli and approx. 1/2 stick of butter. Serve over a mound of cottage cheese, and enjoy.

+Sani Hashmi Hi Sani, I actually don't know the answer to your question. I think bread flour would be very similar nutritionally and if you use whole wheat, try doing 50/50 at first to see if it works...I would think it would! Let me know how it turns out. xo
