Greetings! I had some leftover chicken paprikash from Sunday's dinner. The perfect side dish to go along is Nokedli! Hungarian noodle dumplings that are similar to Spaetzle.
These are very easy to make with or without a noodle maker, you can just use a board and a knife! You probably have everything you need in your kitchen to whip these up, bread flour, eggs water and salt. You can make these in about the same time as it takes to make a pre made noodle and these are light and fluffy, delicious and addictive!
Nokedli are a happy memory of my childhood. These are best made and eaten fresh. If you have extra, you can freeze them after they are cooked. They are very delicate and do not recommend dehydrating them because they will lose their fluffiness and lovely texture.

Noreen, I am in my late 70s and haven’t made noodles for a while and watching your video has always helped me to do the noodles. I was born first generation Hungarian and my mother‘s family and the first born in the states and I grew up, watching her, make those noodles with a knife off the edge of a plate, and that is the way I have always made it but over the past 20 years or so I’ve gotten kind of lazy and so watching your video has helped me to snap back to it. We just had a Christmas dinner here and I made chicken and dumplings, and the dumplings I made were the nokedle. My mother used to use the board and knife method. I was amazed at how fast she could do it. I use the spatzele maker; it goes so much faster. Thanks for posting your video.

I bought a nokedli maker from a Hungarian catalog. It looks like a pot but you have a spinner inside that presses the dough through. So much easier than what I used to do with baby spoon or knife. We need more Hungarian cooking videos.

My Hungarian mother-in-law used to make the Nokedli right in the pan that she mixed them in. It was good to see that someone still does it the same way except on the board. Made me happy to see this today. Thanks for making them.

That's exactly how I make my spatzele, except I done have the spatzele maker. I use a colander with large holes and a spatula to push the batter through. Also, I sauté my spatzele in melted butter to brown them a bit. Wonderful video! Thanks so much for posting! Another thumbs up!

I had Nokedli for the first time last night with my Hungarian neighbours and I’m hooked. This is a great video, thanks for demonstrating the machine as well as the traditional method. I prefer the tiny noodles so will consider buying one for myself.

Boy, that looks so good! I don't have a spaetzele maker (yet), so I push my batter through a collander. I make Helushki with the homemade spaetzel (fried cabbage and onions in lots of butter, smoked sausage, and the spaetzel, all fried in butter). I even prefer spaetzel in soups to regular store-bought noodles. I gotta comment on this--when you said "back in bowl" I knew it was from one of my favorite movies, All of Me, with Steve Martin and Lily Tomlin!! Great job! Thanks for sharing! My dad did his differently than this. He used 1 egg per cup of flour, I think I'll try 2 next time I make it though. He also made them more dumpling style, dropping a teaspoon of dough at a time. I'll continue doing that because I like the bulk of the noodle. One thing I like doing is adding some oats into the dough, gives it a sweeter flavour.

Hi, Noreen, Thanks so much for the video. Although I had found a recipe for nokedli elsewhere, your video helped me understand the texture of the dough. Result? The nokedli came out perfect the first time I made them. I served them with pörkölt. Awesome. I will certainly make them again. Now it's time for me to try your chicken paprikas recipe. Don.

We use a cutting board and butter knife. Knife off pencil diameter pieces. Goes quick. Then fry in butter and garlic till browned. I'm so hungry now.

Wow this brings back some old memories... My mom used to make them using the board method. Now I can finally repeat her recipe. Thank you. One helpful hint with the cutting board method. Instead of spreading it out, just cut a strip from the main dough, turn it 90deg so the strip is perpendicular and up to the board edge. Then start cutting and dunking your knife. This allows you to cut smaller dumplings much quicker. Again, Thank you for bringing back some fond memories.

I love these! I do plan to purchase a spatzele maker but for now I use the large holes of a cheese grater pushing the batter through with a spatula. Works fine. Thank you for the great video. God bless.

Made these last week and it was a lot of fun! I'm 75% Hungarian and have been experimenting with a lot of recipes from the region the last few years; my grandmother was famous for her halupkies (stuffed cabbage rolls) and I've been trying to replicate those but to no avail (sigh). I made these dumplings the old-fashioned way with a knife and a wood board and they turned out great :) Thanks for the great video, Noreen!

I do this also with one minor change. In the simmering water i add chicken bullion. I get the saltiness from the bullion and it adds a little more flavor to the noodle. I enjoyed how you shaved off the dough into the pot. I think I will try, giving me a more rustic noodle and see the difference from my spetzel maker. Thanks for sharing your ideas.

We do ours a slight more on the wet side and use a teaspoon. We brown butter and onions and mix. My Ma put in tiny cubed potatoes,but no one seems to get them right. I also remember her scaping a tiny bit of nutmeg into the butter as it browned.

HI, would love to see a tutorial on here for pörkölt, if you would consider it. Thanks! I have a spaetzle maker, but my husband showed me how to do them with the knife several years ago. That's how his grandmother always did it, but I would be too slow at that.

Noreen, my grandmother Hedwig is used to use One of theese Spatzlemakers. She startet to use it when she was 50, the got it in Florida. Now she's 78 and she still loves this thing. Greetings from Germany :)

I have a spaetzle maker like that too (it deserves it's space too! LOL), but I have heard that you can do something similar using a colander and a wooden spoon. Put the mixture into the colander, then rap the side of the rim with the wooden spoon, and the little shapes will drop down into the hot water much like using the tool. We like to brown our spaetzle in butter and serve with beef and gravy! Yum!

Well, THANKSSS :) )))) this was fabbbbb to see (THE normal ordinary homely kitchen) and thanksss Noreen for giving meee courage to try this now!!! I've seen loads of videos before , and all seemed too "professionally-complicated" , without enough explanations for a novice like meee. EG. they did not even say WHAT TYPE flour was needed...... My mum used a tiny chopping board and cut the nokedli by hand, feeding the dough while cutting. then she'd use a scoop to remove and drain the nokedli.

Water? I thought milk is more appropriate, as I saw my mother doing it with regular all purpose flour. Also if you make the nokedli by hand spoon is much easier to handle with, adds more control, definitely not with a sharp knife. And always wait for the water to boil.

Closest to my moms recepie. You need to beat the dough till it shines and snaps back off the spoon. On a plate cut from the edge and d r op in the boiling water dip your knife in the water after every cut. Very easy. Do in batches...put in a bowl and toss with butter ...you will not be disappointed.

Love, love, love your videos, Noreen! Just one thing... The correct pronunciation for the German noodle/dumpling is "shpetz-leh," (NOT "spetz-el")... The "e" at the end of the word IS pronounced, just like the the trailing "e" is pronounced in Porsche ("porsh-ah," NOT "porsh")! Also, FYI, the people in Southern Germany use a different type of spaetzle maker, where the dough is squeezed out of a ricer-looking tool that makes longer, rope-like spaetzle! Either shape... DELISH!!!!!

Those noodles look yummy. Don’t forget the 9 lbs of pepper added to it. My Dad, who was 100% Hungarian and 1st generation American, put tons and tons of pepper (and onions) on everything. Just curious, have you ever made orange testa? There is another name but, it’s sautéed onions put into mashed potatoes and lots of Hungarian paprika.

It's called a Spätzle Maker. There are actually two devices with the same name; the kind shown here, for making short Spätzle, and one that looks like a potato ricer that's used to extrude long, spaghetti-like Spätzle.

These look and so easy. BUT can't make them. due to diabetes my husband has almost given up carbs. If I served these he would wonder if I had upped his life insurance. Love watching your videos even if I can't use all your recipes I do tweak some of them so that we can enjoy them.

Very few people know about Hungarian cuisine in the United States. Here Goulash is a dish made with hamburger, spaghetti sauce and elbow macaroni. There are a few Hungarian/American communities in the States but not enough to have made a large impact on American cooking.

I get up very early in the morning and I do my editing after I get the girls school lunches ready but before I get myself ready. Sometimes I don't check as closely as I should and I mess up. This was the case today. I put in a section I meant to cut and cut a section I meant to leave. Cest'la vie~!

My opa made me a special spatzle board that had a curved edge at the end.... my oma always said that they aren't authentic spatzle unless you scrape them from a board.

the pronunciation should be all 3 syllables are the same....the emphasis is not on the KED. Also paprikas is pronounced as SH at the end.
