HUNGARIAN NUT ROLL RECIPE
The recipe makes 3 nut rolls. For best results make all three at once, and place side by side on a sheet pan to rise. This prevents the rolls from spreading sideways and only rising upwards.
1 packet - regular yeast (not rapid rise)
1/4 cup milk
Pinch of sugar to activate yeast
Dissolve above ingredients in a small bowl and let rise in a warm place.
4 cups flour
1 tsp salt
3 tbsp sugar
4 egg yolks
1 cup Half & Half
1/2 lb. butter, unsalted
In a large bowl sift flour, salt and sugar.
In a medium bowl beat the egg yolks then add Half & Half.
Melt the butter but don't let it get too hot as it will kill the yeast.
Combine all mixtures/ingredients and work together until well combined.
Cover and let set in the fridge overnight.
NUT FILLING
Filling for one roll:
1 lb. walnuts, ground
4 egg whites, beaten stiff
1 1/2 cups sugar
2 lemon rinds grated
Filling for 3 rolls:
3 lbs. walnuts, ground
12 egg whites, beaten stiff
4 1/2 cups sugar
6 lemon rinds grated
