HUNGARIAN NUT ROLL RECIPE
The recipe makes 3 nut rolls. For best results make all three at once, and place side by side on a sheet pan to rise. This prevents the rolls from spreading sideways and only rising upwards.
1 packet - regular yeast (not rapid rise)
1/4 cup milk
Pinch of sugar to activate yeast
Dissolve above ingredients in a small bowl and let rise in a warm place.
4 cups flour
1 tsp salt
3 tbsp sugar
4 egg yolks
1 cup Half & Half
1/2 lb. butter, unsalted
In a large bowl sift flour, salt and sugar.
In a medium bowl beat the egg yolks then add Half & Half.
Melt the butter but don't let it get too hot as it will kill the yeast.
Combine all mixtures/ingredients and work together until well combined.
Cover and let set in the fridge overnight.
NUT FILLING
Filling for one roll:
1 lb. walnuts, ground
4 egg whites, beaten stiff
1 1/2 cups sugar
2 lemon rinds grated
Filling for 3 rolls:
3 lbs. walnuts, ground
12 egg whites, beaten stiff
4 1/2 cups sugar
6 lemon rinds grated

I am Romanian / Hungarian and make Nut Rolls as gifts every year. When I saw this was from Toledo I knew it would be good. My family always went to Toledo for visiting other Romanian and Hungarian friends . Although just a few of your ingredients are a little different than my mom's, your method is spot on with hers . Thank you for your demonstration and sharing the recipe. I have always had trouble keeping the filling contained within the roll. I hope that the technique you used with the ends will solve my problem.

My wife, who is Hungarian, said that this guy forgot to pierce the roll with a fork prior to going into the oven. This is done so that the roll does not expand and split.

350’ 45 minutes, he said you can check it so it doesn’t get to brown. It’s at the 13:58 minute mark.

It is found in the dairy section of the grocery store near the milk or coffee cream. It contains a half cream and half milk.

AGAIN, WHY, WHY, WHY,, LEMON ZEST?? There is NO LEMON ZEST in nut roll dough, Stick to the basics,, please..Lemon does NOTHING for nut rolls.

My sides split open and not sure why!
