Hurry Up Spring! Aquafaba Sponge Cake (vegan!)
Ingredients:
3/4 cup Aquafaba
1 teaspoon Apple Cider Vinegar
3/4 cup Sugar
2 Tablespoons Oil
1 teaspoon Vanilla
1 1/2 cups Flour
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
Coconut Icing Ingredients:
1/2 cup Refined Coconut Oil
2 cup Confectioners Sugar
1 teaspoon Vanilla
Pinch of Salt
Non Dairy Milk as needed
Fresh Fruit for Garnish

Try to sift the dry ingredients before folding. Plus you had waaay too many clumps of flour, that's not supposed to be there.

I know the next one will be better - I went out & got the right pan lol & will be more patient with the folding - I'll be sure to show it when I finally make it :)

It’s the fourth time I’ve tried making this and it never worked out :(. When I fold in the flour, by the time I’m halfway through, the mixture literally starts melting (it turns liquid-ish). Is it because I used whole wheat instead of all purpose flour?

This recipe is doomed to fail because the aquafaba foam needs protein (usually recipes add chickpea flour) added to hold its structure during folding. And whole wheat flour will not work unfortunately. I have seen a gluten free recipe though if you want to avoid white flour: thehiddenveggies.com/vegan-angel-food-cake/

Quick question: Is it possible to use whole fats in this recipe instead? (i.e. mashed avocado instead of the oil or coconut manna instead of the oil)

I try and use whole fats whenever possible however this recipe might be a little too delicate to accept the whole fats. This is only the first time I've made this using the aquafaba so I'm really not sure.

I think you could do that with the frosting, not sure about the cake itself. The cake itself doesn't seem to have that much oil in it tho. And it's needed to make the cake moist. Perhaps try a tablespoon of tahini? Or use a flax egg, that might work even better. For the frosting - how about avocado with something like cocoa powder and a sweetener? I would try to sweeten the avocado frosting with one or two medjoul dates.

Yes, kind of. Obviously it won't be the same as a traditional angel food cake but it will be angel food like.

Maybe try sifting the flour next time...and adding way less of it for that volume of aquafaba and maybe add a dough conditioner like agar or xanthan gum or something...it sort of sounded like a rock when you turned it into the plate...not exactly Angel...but thanks for the video...it is a good starting point. Also, your pain from childhood is acknowledged. I would not want to learn from someone berading me either.

Looks good..minus the strawberries. Lol. Cakes are vegan but if I'm craving or at a party things happen. 😂 Try "Rotten" on Netflix Janet. It's a set of documentaries about the food industry. Honey, Garlic, Chicken etc. ✊🏽

He taught you wrongly. People should be encouraged to bake/cook with love. I'm sorry, but your father didn't treat you well.. When you make someone feel bad about what they're cooking, the dish always turns out bad... How we feel goes into what we make So when he makes you feel inadequate and stupid, the living waters of the cake hear you and ..you know the rest Love the aquafaba tip though. Gonna try that soon
