İlham Veren Teknikler - Domates Consomme Mantı 

İlham Veren Teknikler video serimizde bu hafta şeflerimizden Veysel Eren ile domates consomme mantı yer alıyor! Blender’da parçalanan domatesler -30 derecede 20 dakika boyunca soğutulduktan sonra süzülüyor. Elde edilen domates suyuna agar agar ve tuz ilave edilerek pişirildikten sonra şırınga yardımı ile kalıplara alınıyor ve 20 dakika boyunca şok soğutucuda soğumaya bırakılıyor. Soğutulan consomme topları hazırlanan hamura yerleştirilip şekil verilerek haşlandıktan sonra salatalık jel ve mikrofilizler de eklenerek servis hazır hale getiriliyor.

After the tomato juice is cooked with agar agar and salt it is taken into molds with the help of a syringe and left to cool in the blast cooler for 20 minutes. The cooled consomme balls are placed in the prepared dough, shaped and boiled, and it will be ready to serve after the addition of the cucumber gel and micro-sprouts.
