Using citric and malic acid has been a thing for some time now. Lately it’s been getting more popular due to bars like Sunken Harbor in Brooklyn. You could make pineapples as acidic as lemons or limes and use them in classic cocktails like I did here. Why do this? Why not is the question.

2 oz Aged Rum
3/4 oz Acid adjusted pineapple
1/2 oz Orange Curacao
1/2 oz Orgeat
5 drops Saline
DAIQUIRI
2 oz Rum of your choice
3/4 oz Acid adjusted Pineapple
3/4 oz Simple Syrup or 1 tablespoon sugar
