21:35 compound chocolate aur paani touch nahi hone chaiye there can be several reasons for it 1- apne niche wale bowl me pani jyada dal liya 2- fridge me chocolate rakh di 3- chocolate me paani dal diya Also aisa ho to thoda pani garam karke isme add Karo ganache ban jayega but it won't set (I have been baking for few years now aur experience bohot gande wale kiye hai 😂❤)

If you want to make your chocolate melt perfectly you should follow these instructions 1. Don't keep compound chocolate in fridge if keeping make sure it is in an Air tight container 2. The chocolate should not come in contact with water other wise it won't melt in double boiler method 3. Make sure that the steam from the double boiler does not comes up to the chocolate otherwise it will start solidifying

make sure the utensils you are using for melting dark choc compound are dry. if they are not the chocolate will not melt , also add a little butter for that extra shine

Hi, during the melting of chocolate, if the consistency is not proper, then u might consider, adding arnd 1-2 tbsp of milk, and 1 spoon of butter in it to adjust the consistency. ps: do not mix water and chocolate, make sure the bowl is completely dry while doing this. I've been baking since quite a lot of time now, so have experienced such stuff a lot many times :)
