Baked zucchini recipe (or air fryer), with garlic sauce.
Ingredients (2 servings):
• 4 small pumpkins or one large one
• A large egg
• 100-150 g breadcrumbs with paprika
• 30 g of parmesan that we will grate finely
• A few spoons of oil
• Dried thyme
• Salt
• Ground black pepper
If you use the oven, preheat to 220 degrees Celsius. For the electric oven, choose top and bottom heat, without ventilation.
If you have small pumpkins, cut them into quarters lengthwise. If you have larger pumpkins, cut the rings of the appropriate thickness.
Take a large egg, break it into a small oblong bowl, and add 2-3 tablespoons of water. Beat well. Then add a generous pinch of salt and ground black pepper.
Mix half a teaspoon of dried thyme and finely grated parmesan in the breadcrumbs with paprika. If you don't have Parmesan, you can use old sheep's cheese instead, which you leave uncovered in the refrigerator to dry and harden, like Parmesan.
Take a piece of zucchini and roll it in egg, then in breadcrumbs. If the zucchini is not well covered with breadcrumbs, all you have to do is dip it once more in the egg and breadcrumbs. But if you do this for all the pumpkins, you'll probably have to break another egg.
After wrapping all the pieces of zucchini in a crispy coating, sprinkle a few tablespoons of oil on top.
Place on an oven tray lined with baking paper or on the airfryer tray.
For the airfryer, I used a temperature of 200 degrees Celsius, without preheating, and baking lasted 15 minutes. Of course, depending on your device, it may take longer or less, so keep an eye on them.
In the oven, put in the oven preheated to 220 degrees Celsius, also on average 15 minutes, but of course the same thing is valid. It may take longer or less depending on everyone's oven.
