I've had two experiences at snack bars, both in Kanazawa. At one, the owner clearly did not want foreigners there. He flat out ignored us, and we walked out. At the other, the owner chatted with me about whiskey and jazz, and in honor of my wife and I's recent marriage (we were there on a honeymoon) she gave us a handmade clay sake cup from behind the bar. 10/10 would recommend both experiences.

My most memorable nights in Japan have been in themed bars. Namely in my case punk/rock/metal bars. On the off chance I was in Kumamoto and just googled if there were even any rock bars. One I came across catered for all. Even played some NIN, so, extra points there.
